Ready in just 15 minutes, this healthy breakfast is the filled with fiber, antioxidants and omega-3-fatty acids. This is the perfect way to start your day!

My friend Lee, of Fit Foodie Finds is one of those people that you just can’t help but love. She’s adorable, creates the most amazing, healthy recipes, is such a fitness inspiration and has incredible hair.
Like major hair envy type of incredible.
Lee made this simple yet scrumptious breakfast for us and I know I can’t wait to make it. I am so into blueberries these days and you already know my love of chia. The more chia seeds the better!
Who couldn’t use some more fiber and antioxidants in their diet, right?
Right.
The best part of this is that I can even make this on a busy school-day morning! And even though I love blueberries, I bet any fruit would be just as delicious in this.
Oatmeal is one of the few things that I am consistently eating these days. My appetite is coming back slowly and luckily my love affair with oatmeal really never left. No joke, I was worried my taste buds would change.

Blueberry Chia Oatmeal
Ingredients
- Dry
- 2 cups rolled oats gluten-free
- 3 tablespoonschia seeds
- 2 teaspoons vanilla extract
- pinch of sea salt
- 1 cup blueberries
- Wet
- 2 tablespoons honey
- 4 cups almond milk unsweeteend
- 1 tablespoon lemon
Instructions

Place all ingredients in a medium-size pot and bring to a boil at medium/high heat.

Reduce heat to medium and let simmer for about 10 minutes, stirring often until oatmeal has thickened and most of the liquid has absorbed.

Top with walnuts and fresh blueberries.

So I finally started eating chia seeds and I actually have Blueberry Chia Oatmeal at least twice a week for breakfast! It’s seriously one of my favorites!

Wow is that ever a pretty breakfast to get me going! You may be shocked…however I have never tasted a chia seed…In anything! Lol! Blueberries however are a different story! Yummm!!
