    Watermelon Mint Salsa

    This Watermelon Mint Salsa is lightly sweet, refreshing and a huge crowd pleaser. It's time to get creative and think outside the box when it comes to salsa! Perfect for your next barbecue or cookout.

    This watermelon salsa is simple to make, healthy and delicious.  How ridiculously adorable is that little watermelon bowl?  

    This has a great presentation and I should know, I have already brought it to several summer parties.  It looks fancy, but it' really isn't's so easy to prepare.  I love when that happens.

    Why You Should Make this Watermelon Mint Salsa

    I must be on a watermelon/mint kick these days because I make my Watermelon Mint Slush 3-4 times a week.   It is my favorite combination these days.

    It's so refreshing and has the perfect amount of (natural) sweetness.  I make my Tropical Fruit Salsa from The Everything Wheat-Free Diet Cookbook very often (on page 173 to be exact) but I wanted to try another fruity version of salsa this time.  

    This not only has a beautiful presentation for all of your summer parties, but I love offering healthy options too. This will be ready in 30 minutes and is definitely best served fresh.

    Watermelon Mint Salsa

    This Watermelon Mint Salsa is lightly sweet, refreshing and a huge crowd pleaser.  It's perfect for your next barbecue or cookout.

    Ingredients

    • 1 small personal size watermelon
    • 1 clove garlic minced
    • 2 tablespoons onion minced
    • 3 tablespoons lime
    • 1 teaspoon lime zest
    • 1 tablespoon fresh cilantro chopped
    • ½ large bell pepper seeded and chopped
    • 2 tablespoons fresh mint chopped
    • 1 tablespoon jalapeño seeded and minced
    • salt to taste

    Instructions

    • Scoop out watermelon and chop into bite size pieces.
    • Place in colander with a bowl underneath it to save all the juice.
    • Place in the refrigerator overnight.
    • The next day, mix all the ingredients in a medium bowl and put back into the refrigerator for at least an hour to combine flavors.
    • When ready to serve, place into watermelon bowl and serve cold.

    Notes

    This watermelon salsa is best served fresh immediately. 
    If there are leftovers, store in an airtight container in the refrigerator for a day or two.

      Hooray for clean margins! I can't imagine trying to rest an incision on your belly without plopping on the couch for weeks, but life must go on. Glad you had fun at EWR. This salsa would be a refreshing snack to nosh on while resting in the shade.

      Lauren I had no idea about any of this. I've been so preoccupied, I am so sorry. I am so glad you are okay and things look good. That's so scary. Big hugs your way. And much empathy.

      On a lighter note this recipe is fabulous. I love watermelon salsa, or just watermelon straight up. When I was pregnant with my son I must have eaten a watermelon a day for the last two months. It's all I wanted, 24/7. So weird, right.

      Eeek! I can't imagine trying to travel with a belly incision...I'm rough on myself as it is with the weight of my bags and such. Glad your report came back clear! This salsa sounds wonderful and refreshing, I love the combo of watermelon and mint (and so great served in a hollowed out melon).
