I am always on the hunt for new, easy recipes. I am also currently trying to cut back on carbs after putting on a few pounds over the winter.
I hurt my back and haven't been able to work out and since I am showing my house to sell and not being able to cook my own meals, I haven't been eating as well as I normally do. Spring is coming and it's time to get serious.
I am getting back into cooking and it feels great to be back in the kitchen! I missed it so much and I feel better when I meal prep and cook my own (and my family's) meals.
Being that my kids are waaaaay too busy with sports and activities, it gets even more difficult to get easy, nutritious dinners prepared for my family. It's a good thing my family loves Bumble Bee® Solid White Albacore Tuna, which is not only versatile in many recipes, but is also an affordable source of protein.

Now back to this recipe. The tuna cakes themselves are naturally gluten free and low carb. The delicious Mango Salsa is not low carb, but definitely eat even a little bit if you are watching your carbs. It's worth it, trust me!
These tuna cakes take only 15 minutes from start to finish, which is perfect for me to prepare on a busy weeknight. Basically mix all of the ingredients together in a bowl, form into patties and cook for 3-4 minutes each side.
That's it.
The most time consuming part of this recipe is chopping the fruits and vegetables for the salsa!
Don't step away from the stove because they cook that quickly!

Ingredients
- For the Tuna Cakes:
- 2 cans Bumble Bee® Solid White Albacore in Water rinsed and drained
- 1 egg
- ½ cup almond flour
- 1 tablespoon olive oil
- ½ teaspoon salt
- 1 teaspoon parsley
- 2 cloves garlic diced
- ¼ cup diced onion
- 1 teaspoon lemon juice
- For the Mango Salsa:
- 1 mango peeled and chopped
- ¼ cup chopped pineapple
- 1 green onion chopped
- ½ red bell pepper chopped
- ½ cup cilantro chopped
- ¼ teaspoon red pepper flakes
- ¼ teaspoon sea salt
Instructions
- Prepare tuna cakes by mixing all of the ingredients together in a medium bowl.
- Form into 5 palm sized patties.
- Place in a sauce pan covered in nonstick cooking spray and cook over medium heat for 3-4 minutes on each side.
- Remove from heat.
- To prepare the salsa, mix all of the ingredients together and serve on top tuna cakes.
- Serve over a bed of spinach or wrapped up in a lettuce wrap.
