    Juicy and tender shrimp loaded with vegetables, coated with delicious spices and ready in 20 minutes! Serve these easy to make Shrimp Fajitas with warm tortillas or cauliflower rice.

    With summer slowly coming to an end and the kids going back to school next week, I am looking for easy to prepare, healthy recipes that I can make on busy weeknights. Loaded with protein and will be ready in 20 minutes, what's not to love?

    I've made these Shrimp Fajitas several times and each time I used whatever vegetables I had in the house. However to remain as close to classic fajitas, I used bell peppers.

    Why You Should Make These Shrimp Fajitas

    These delicious and healthy, low carb Shrimp Fajitas will be ready in 20 minutes, so they are perfect for busy weeknights.I love this dish because it looks fancy but really is so easy to make.

    Loaded with protein, low in carbs and are packed with flavor. There is nothing boring about these shrimp fajitas.

    These are also customizable and you can use whatever veggies you'd like. You can serve this over cauliflower rice or in some low carb tortillas.

    Recipe Ingredients

    • Chili powder - A blend of ground dried Chile peppers and seasonings. It has also been shown to possibly increase fat burning and metabolism.
    • Cumin powder - Might just be my favorite seasoning! Cumin also contains antioxidants and has been shown to help control blood sugar and may help fight bacteria.
    • Garlic powder - I also use garlic powder because I always have it on hand in my house but you can also equal amount of minced fresh garlic.
    • Onion powder - I use onion powder in this recipe because I have it in my house always, but you can use equal amounts of white onion, shallot or even dehydrated onion instead.
    • Oregano - I love cooking with oregano in so many savory dishes, it's extremely versatile.
    • Extra Virgin Olive Oil - I love my EVOO. Some of those benefits of extra virgin olive oil are that its anti-inflammatory, it may help prevent heart disease and diabetes and may even help to lower cholesterol levels.
    • Red and yellow bell peppers - I like to make sure my red peppers are firm and shiny with no soft spots.
    • Shrimp - Using frozen shrimp that is already split and deveined makes life easier. Who doesn't love a shortcut?

    How To Make Shrimp Fajitas

    In a small bowl mix red chili powder, cumin powder, garlic powder, onion powder, oregano, salt, and black pepper.

    Heat oil in a large pan over high heat. Add the peppers and onions and sauté for a few minutes until the vegetables are a little tender and aromatic but not fully cooked (they should have a slight crunch). Transfer to a plate.

    In the same pan, add the shrimp and sprinkle the seasoning blend over the shrimps. Cook for 2-3 minutes on each side until the shrimps are pink and cooked through (do not overcook otherwise they will be chewy and rubbery).

    Quickly add the vegetables back into the pan, give everything a toss and squeeze 1 teaspoon of lime juice on top.

    Sprinkle chopped cilantro on top and serve with lime wedges if desired.

    Recipe FAQ's and Expert Tips

    Can this be frozen?

    It’s best to consume Shrimp Fajitas immediately however; you can store leftovers in an airtight container for 3-4 days in the refrigerator. To reheat, warm the shrimp gently in the microwave in 30-sec intervals or reheat quickly on the stovetop; make sure not to overcook. Freezing is not recommended.

    How do I serve these Shrimp Fajitas?

    You can top shrimp fajitas with salsa, guacamole, sour cream, jalapenos and different types of cheese. You can wrap these in low carb tortillas, serve over cauliflower rice or over a bed of greens.

    Can I use frozen shrimp for this recipe?

    Absolutely! Just make sure they are defrosted and dried. If using frozen shrimp just make sure that they are not precooked and are raw..

    Ingredients

    • 2 teaspoons red chili powder

    • 1 pound shrimp peeled and deveined, remove the tail if desired
    • 1 teaspoon lime juice
    • chopped cilantro for garnish

    Notes

    If you don’t have all the spices mentioned in the recipe at home or if you don’t have time to gather them all then you can use store-bought seasonings such as taco seasoning. Read the ingredients to make sure no added fillers are in the seasoning. I like this one.
    You can make shrimp fajitas in the oven as well – Toss all the ingredients together in a large bowl (shrimp, bell peppers, onions, seasoning, and oil) and spread on a sheet pan. Cook it at 400 degrees for 10-12 minutes or until cooked through; top it with chopped cilantro and fresh lime juice and serve.
    I suggest using large or medium-sized shrimp in the recipe. Don’t use small shrimp as it’s easy to overcook them. Keep in mind that cook time might vary depending on the size of the shrimp so watch your shrimp carefully as they cook.
