    Red White and Blue Greek Yogurt Parfaits

    I can't believe Memorial Day weekend is almost here.   I am not only actually excited for the warm weather and longer days and eating lighter.

    I still do my meal prep days all summer long and these greek yogurt parfaits are one of those easy recipes I like to keep on hand all the time.

    If you are looking for other easy to make breakfast/snack recipes, you will love this Avocado Chocolate Chia Pudding, Layered Mango Chia Pudding, Chocolate Coconut Chia Pudding and definitely this Cherry Vanilla Almond Chia Pudding!

    These would be extra delicious with some Apple Chai Latte, Eggnog Latte, Low Carb Bulletproof Hot Chocolate or even some Spiked Apple Cider!

    Why You Should Make These Red White and Blue Greek Yogurt Parfaits

    I made these (adorable) parfaits and was so proud of them!  These are incredibly easy to make and loaded with protein and fiber.

    And let's be honest- these are adorable in patriotic colors but you can easily use whatever fruit you have in the house. I promise they will still look colorful and pretty.

    The best part about these parfaits?  There is no added sugar at all!  I just used the natural sweetness from the fruit and it was perfect.

    You can easily make these on your meal prep day and keep them in the refrigerator for a convenient breakfast or snack.

    Recipe Tips

    You can make these ahead of time and they will last in the refrigerator for 5 days. I like to give it a few mixes before eating and it's always perfect each time.

    Add some other fun seeds for more nutrition! Hemp seeds, flax seeds, pumpkin seeds, sunflower seeds... the possibilities are endless.

    If you are like me and tend to eat the same things (or similar variations) daily, then adding in different seeds, or some nuts or different flavors of protein powder (chocolate protein powder is delicious too!) will help to prevent getting bored.

    Frequently Asked Questions

    Are Greek yogurt parfaits healthy?

    Absolutely! Each one of these parfaits contains 28 grams of protein, 12 grams fiber (almost ½ your recommended daily allowance) and tons of vitamins and antioxidants.

    Can I use flavored Greek yogurt instead of plain?

    Yes you can. Just make sure to read labels because many of the flavored Greek yogurts contain extra sugar.

    Can I use frozen fruit in this Greek yogurt parfaits?

    Yes but make sure that it's completed defrosted or it might make the fruit soggy.

    Ingredients

    • First layer:
    • ½ cup strawberries
    • 1 tablespoon chia seeds
    • chopped strawberries
    • Middle layer:
    • 1 cup plain Greek yogurt
    • ½ scoop Protein powder
    • Top Layer:
    • ½ cup blueberries
    • 1 tablespoon chia seeds
    • 1 tablespoon blueberries for topping

    Instructions

    • In a blender, mix together 1 cup strawberries and chia seeds and blend for a minute.
    • Pour into a mason jar or glass. Top with extra chopped strawberries if you'd like.
    • If you'd like to have he layered look, let sit in the freezer for 10 minutes to set.
    • Add cup of Greek yogurt.
    • Let sit in the freezer for 10 minutes until set.
    • Making sure the blender is clean, blend together cup of blueberries and chia seeds for a minute.
    • Pour on top of Greek yogurt. Top with blueberries.

    Notes

    To store: Place in airtight container ( I use mason jars) and place in the refrigerator for up to 5 days.

      I have still yet to try chia seeds. I see them in the store, pick them up, and wonder how to use them. And I leave without them every time. Now I have somewhere delicious to start! Buying chia seeds today.

      That's one thing I don't miss, having older kids means no homework. But then you trade it for drivers training, parties, dating, and the little monsters abandoning you for the summer. Ha, can you tell I'm not loving them both being gone this summer> lol

      This is a fabulous recipe. Healthy and yummy, it's perfect for the holiday weekend. Or any weekend.

      I'm sure no homework is a beautiful thing!! I struggled with my own homework as a kid so I can't imagine helping other people. Love these festive parfaits - they are so pretty to look at and I'm sure taste as good as they look!

      I'm so in love with chia seeds. There's a pudding I make with them and have been eating almost every day for a year now! But it's not as fun and festive as this. Perfect for this weekend's holiday!
