Get patriotic with these healthy, fun and simple to make Greek yogurt parfaits!
I can't believe Memorial Day weekend is almost here. As long as this winter was, summer definitely seemed to creep up on me. I am not only actually excited for the warm weather and longer days, but guess what I am most excited about? NO HOMEWORK.
I have three kids who do homework at the same time because most days we usually need to be somewhere later. Besides the fact that I struggle with 4th and sometimes 2nd grade homework (don't judge me), but it's hard trying to give each child the attention that they need.
And projects, don't get me started on the projects. When I hear the word diorama, I want to run and hide. I can get pretty creative with food and recipes, but artsy stuff? Not a chance.
Ok, now let's get back to the one thing I can get creative with….healthy food!
I made these (adorable) parfaits and was so proud of them! My oldest son came downstairs and said "Those are cool! But shouldn't the red be on the top and the blue on the bottom? Red, white and blue?" Waa Waa Waaaaa (in my best debbie downer music). He was right! But you know what? They are still cute and adorable and I'm sticking to it.
The best part about these parfaits? There is no added sugar at all! I just used the natural sweetness from the fruit and it was perfect.
Ingredients
- First layer:
- 1 cup strawberries
- 1 tablespoon chia seeds
- chopped strawberries
- Middle layer:
- 1 cup Stonyfield plain Greek yogurt
- Top Layer:
- 1 cup blueberries
- 1 tablespoon chia seeds
- 1 tablespoon blueberries
Instructions
- In a blender, mix together 1 cup strawberries and chia seeds and blend for a minute.
- Pour into a mason jar or glass. Top with extra chopped strawberries if you'd like.
- If you'd like to have he layered look, let sit in the freezer for 10 minutes to set.
- Add cup of Greek yogurt.
- Let sit in the freezer for 10 minutes until set.
- Making sure the blender is clean, blend together cup of blueberries and chia seeds for a minute.
- Pour on top of Greek yogurt. Top with blueberries.

That's one thing I don't miss, having older kids means no homework. But then you trade it for drivers training, parties, dating, and the little monsters abandoning you for the summer. Ha, can you tell I'm not loving them both being gone this summer> lol
