Get patriotic with these healthy, fun and simple to make Greek yogurt parfaits!

These Red White & Blue Chia Pudding Greek Yogurt Parfaits are the perfect, healthy snack for the holidays! www.laurenkellynutrition.com #healthy

I can't believe Memorial Day weekend is almost here.  As long as this winter was, summer definitely seemed to creep up on me.  I am not only actually excited for the warm weather and longer days, but guess what I am most excited about? NO HOMEWORK.

I have three kids who do homework at the same time because most days we usually need to be somewhere later.  Besides the fact that I struggle with 4th and sometimes 2nd grade homework (don't judge me), but it's hard trying to give each child the attention that they need.

And projects, don't get me started on the projects.  When I hear the word diorama, I want to run and hide.  I can get pretty creative with food and recipes, but artsy stuff?  Not a chance.

Ok, now let's get back to the one thing I can get creative with….healthy food!

I made these (adorable) parfaits and was so proud of them!  My oldest son came downstairs and said "Those are cool!  But shouldn't the red be on the top and the blue on the bottom? Red, white and blue?"  Waa Waa Waaaaa (in my best debbie downer music).  He was right!  But you know what?  They are still cute and adorable and I'm sticking to it.

The best part about these parfaits?  There is no added sugar at all!  I just used the natural sweetness from the fruit and it was perfect.

Red, white and blue OR blue, white and red haha either way they're perfect for Memorial day (or any patriotic holiday really). Love that there isn't any extra sweetness added!

I feel the same way about dioramas! Thank goodness we haven't encountered a single one in middle school with my older son. These parfaits are such a wonderful idea for the holiday weekend!

Ha! I wouldn't have even noticed the correct order. Clearly kids are needed to point these things out. I can't believe it's Memorial Day weekend either, seems too soon for it!

So funny because kids will ignore so many things, but observe THAT? 😉

Love your Debbie downer music theme! My kids would have noticed the same thing my friend but I probably would have made it like you starting with the red on the bottom! I love it and I think you're awesome!

I have still yet to try chia seeds. I see them in the store, pick them up, and wonder how to use them. And I leave without them every time. Now I have somewhere delicious to start! Buying chia seeds today.

That's one thing I don't miss, having older kids means no homework. But then you trade it for drivers training, parties, dating, and the little monsters abandoning you for the summer. Ha, can you tell I'm not loving them both being gone this summer> lol

This is a fabulous recipe. Healthy and yummy, it's perfect for the holiday weekend. Or any weekend.

I'm sure no homework is a beautiful thing!! I struggled with my own homework as a kid so I can't imagine helping other people. Love these festive parfaits - they are so pretty to look at and I'm sure taste as good as they look!

I'm so in love with chia seeds. There's a pudding I make with them and have been eating almost every day for a year now! But it's not as fun and festive as this. Perfect for this weekend's holiday!

I actually had no idea it was Memorial Day. Shows how much my Canadian self knows.
What I do know is that I love me some chia pudding, and with no added sugar? I'll have 2! Pinning!
