Why You Should Make This Mixed Berry Overnight French Toast Casserole
This delicious French toast casserole is so simple to prepare with easy ingredients you probably already have in your house.
This is especially convenient on those busy days when you don't have the time in the morning to prep it. That is why I make this for Easter, Christmas and all of my kids' birthdays when I don't have the time to prep it that early in the morning.
This French toast casserole recipe is lightened up with Greek yogurt so it's a little healthier than the standard casserole. Everyone loved my Overnight French Toast Casserole so much (it's in The Greek Yogurt Cookbook!) that I knew I had to add some fruit to it.
You really don't need any additional maple syrup, this french toast is sweet enough on its own. It looks fancy enough for guests, but takes minutes to prepare.
Recipe Ingredients
- Stale loaf bread- Stale bread absorbs more of the egg mixture than fresh bread will and it's also a great way to use up old bread!
- Eggs- I use farm raised, organic eggs. Eggs add a complete source of protein.
- Plain Greek yogurt- My favorite! Greek yogurt adds protein and a smooth texture.
- Almond milk- or any other milk of your choice. I used unsweetened almond milk to make sure there are no added sugars or ingredients in this french toast casserole.
- 100% pure maple syrup- This Maple Syrup is my favorite. This is a great unrefined, natural sweetener that is high in antioxidants and minerals.
- Frozen mixed berries- adds antioxidants, vitamins and lots of color!
- Butter- I always use 100% grass fed, organic unsalted butter which just plain old tastes better!
- Ground cinnamon - One of my favorite spices, it always adds so much to my baked goods. I love this one.
- Flour- I used all purpose flour but you can use a light flour of your choice, almond flour and gluten free flour are also great options.

Stale bread will definitely help prevent it from getting soggy. Also, making sure you don't use too many eggs will also help.
You can leave the bread out on the counter overnight to harden a bit. This will help prevent it from getting soggy.C
Yes, but I recommend you cooking the casserole first and then freezing any left overs in an airtight container.
I used Challah bread and 100% whole what bread to make this casseroleand boy was it fluffy and incredible. My friend just told me that she made this using Trader Joe's Brioche bread and was in love with that as well.

Overnight Mixed Berry French Toast Casserole
Ingredients
- 1 loaf stale bread
- 5 whole cage-free eggs
- 2 cage-free egg whites
- 1 cup nonfat plain Greek yogurt
- 1 cup almond milk
- 3 ⁄4 cup 100 percent pure maple syrup
- 1 16 ounce bag of frozen organic mixed berries
- 2 tablespoons cold butter diced
- ¼ cup unrefined brown sugar packed
- 1 teaspoon ground cinnamon
- 1 ⁄4 cup all-purpose flour
Instructions
- Take berries out of the freezer and defrost for at least 30 minutes.
- Spray a 9" × 13" casserole dish with organic nonstick cooking spray.
- Tear bread into pieces and spread them throughout the casserole dish in an even layer.
- In a large bowl, mix eggs, egg whites, Greek yogurt, milk, and maple syrup. Mix very well until smooth and thoroughly combined. Pour egg mixture completely over bread.
- In a small bowl, mix butter, brown sugar, cinnamon, flour, and pecans, if using. Mix until all ingredients are combined, even if still lumpy.
- Add defrosted berries on top of bread mixture.
- Sprinkle the butter mixture on top of the bread. Cover and refrigerate overnight. If cooking the same day, make sure to refrigerate at least 30 minutes before baking.
- 6. In the morning, preheat the oven to 350°F. Bake for 45 minutes until golden brown and the middle of the dish is set. Serve immediately with maple syrup, if desired.
