    Coconut Water Ginger Lemonade

    Light, refreshing and nutritious, this Coconut Water Ginger Lemonade will be your favorite summer beverage.  It's packed with anti-inflammatory properties and electrolytes too.

    Back to reality for the Kellys...

    We spent last week in Florida visiting family and it was amazing.  No schedules, no freezing temperatures, just warm weather, sunshine and family.  It was a vacation that we all really needed.

    One day, we went out for lunch and I ordered a Coconut Water Lemonade at a restaurant we went to on the beach.  I am not a huge fan of coconut but it sounded so refreshing (and healthy) so I decided to give it a try.

    It was amazing! I knew I wanted to recreate it when I got back to NJ and share it with you guys.  I added some ginger to mine (ginger is an amazing anti-inflammatory) and of course, chopped mint. This will be my favorite drink this summer, I just know it.

    Why You Should Make This Coconut Water Ginger Lemonade

    This delicious ginger lemonade is light, simple to make and super refreshing. Most importantly, it's loaded with anti-inflammatory and antioxidant properties.

    This ginger lemonade is very low in calories too. At less than 70 calories per serving, go ahead and sip and enjoy.

    With all of my health issues, I am always looking for foods and drinks to help reduce inflammation in my body. Ginger is one of the most powerful anti-inflammatories and I try to add it to just about everything.

    Recipe Tips

    Add whatever sweetener you'd like, I only made this twice so far, once with raw honey and the other with coconut nectar.  They both were incredible, just remember if you use the raw honey it will no longer be vegan.  

    Use whatever sweetener you'd like! I bet stevia would also work well in this too if you are looking for a refreshing drink with no added sugar.

    If you are planning on storing this in the refrigerator to drink over a few days, I would add the mint leaves right before serving so you aren't drinking limp, soggy mint leaves each time.

    Ingredients

    • 2 liters coconut water
    • 1 cup lemon juice
    • ⅓ cup grated ginger
    • ½ cup coconut nectar
    • 1 cup ice
    • lemon slices
    • mint leaves

    Instructions

    • Place the first four ingredients in a large pitcher.
    • Mix well.
    • Add lemon slices and torn mint leaves.
    • Allow to sit in the refrigerator for 30 minutes.
    • Garnish with extra lemon slices and mint leaves.

    Notes

    To store in the refrigerator: place in a pitcher for up to 5 days.
    You can also make ice cubes with any leftover coconut water ginger lemonade. They add a nice, fun addition to water and cocktails.

      This is so refreshing and very cooling! I love making this during the summertime and everyone loves it! Definitely one of our favorite drinks in the summer especially after being outside a lot!

      Hi Lauren, this sounds wonderful and I was wondering where you buy coconut nectar? I've never looked for it and don't know if I have to go to a specialty store or the regular grocery market. Also, how fine do you need to grate the ginger, once again something I've never bought or used? I have kidney stones and am always mixing up lemonade or squeezing lemon slices in my water. I love coconut so anything that mixes those two things together and will help getting extra fluid in me is always a plus.Thanks for your help!

        Hi Susan! You can use whatever sweetener you'd like! I bought coconut nectar at whole foods and online at amazon. I like to grate my ginger very fine. You can easily buy ginger root at any grocery store. I hope that helps! And I hope you enjoy the lemonade 🙂
