    Peanut Butter Protein Muffins

    These Peanut Butter Protein Muffins are lightly sweet and can be made ahead for an easy breakfast or snack. Make a double batch and freeze some for busy mornings!

    These delicious protein muffins are the perfect take along breakfast or snack. I like to store these in the refrigerator for whenever I need a protein filled snack.

    Protein muffins are also super freezer friendly as well. I just take one out the night before and let it defrost in the refrigerator and it's ready to go in the morning.

    Why You Should Make These Protein Muffins

    These muffins are light, healthy and packed with flavor.  Now with my kids back at school, I am looking for easy, healthy recipes that I can make ahead and have ready for breakfast, snacks or even in my kids' lunch boxes.  

    And if for some crazy reason you have leftovers that won't be eaten right away, you can easily freeze them.  Simply take them out and place in the refrigerator the night before and they will be ready for breakfast in the morning!

    Make a double batch and freeze some for busy mornings. It will definitely make life easier on those busy, hectic mornings with three kids in three different schools.

    These muffins are super healthy delicious, and I thought why not add some protein to them?  I love adding good quality, protein powder to baked goods.  

    Remember, not all protein powders are the same. Many of them contain unnecessary preservatives, chemicals and artificial sweeteners and colors.

    It is very important to not only read your labels for the nutrition information like calories, protein, fat and carbohydrates, but also read the ingredient list. What ingredients are in your food products is essential to understanding how to eat better and cleaner.

    I recommend Orgain Protein Powder which is vegan, soy free, gluten free, dairy free, sugar free and non-GMO. Now you see why I like it!

    Recipe Tips

    These protein muffins are vegetarian but you can easily use 100% maple syrup to make them vegan (honey isn't vegan since it comes from a bee). I have used honey, maple syrup and even Monk Fruit which is a Saturday sugar alternative and I love baking with it.

    Monk Fruit is always my first choice when I am baking these days. It's low carb, sugar free and is an easy substitute for sugar.

    You can use any nut butter you'd like if you have food allergies and I bet my homemade sunflower seed butter would be delicious in here as well.   But my heart will always belong to peanut butter.  

    It's funny, once you start eating the natural kind for years and have a taste of that processed stuff, you can't go back.  At least I can't.  

    You can easily make your own peanut butter too which I will do frequently.  It might sound fancy, but trust me, it's just crushing up peanuts (and I add ground flax) to a high speed blender or food processor.  It's that simple.  And that delicious.

    I just made these with crunchy almond butter and it was a hit with the family! I love the added texture that the crunchy almond butter gives.

    I know many of you guys added chocolate chips to the batter which is always a great idea. Someone just recently told me that they made these protein muffins and added fresh strawberries to make it taste like a peanut butter and jelly sandwich.

    Peanut Butter Protein Muffins

    Ingredients

    • 1 ½ cup whole wheat flour
    • 1 ½ teaspoon baking powder
    • ½ teaspoon salt
    • 1 cup protein powder
    • ½ cup raw honey
    • 3 very ripe bananas mashed
    • ½ cup unsweetened applesauce
    • ½ cup natural creamy peanut butter

    Instructions

    • Preheat oven to 375 degrees.
    • Spray muffin tin with cooking spray or line with muffin liners.
    • In a medium bowl mix together flour, baking powder, salt, protein powder until combined.
    • Add honey, mashed bananas and applesauce until combined.
    • Add peanut butter and mix again.
    • Bake in preheated oven for 25-30 minutes or until edges are golden brown and toothpick is placed in the center and comes out clean.

    Notes

    To store in the refrigerator: Place cooled protein muffins in airtight container for up to 5 days.
    To store in the freezer: Place in rolled protein muffins in airtight container for up to 3 months.
