    Simple Sugar Cookies

    Easy to make with all healthy ingredients, these Simple Sugar Cookies will be your new family favorite treat! These are completely freezer friendly and kid approved.

    These sugar cookies are the perfect treat for when you want something just a little bit healthier than traditional cookies.  Yes, there is a sugar in them ( I mean, they ARE sugar cookies after all) but I used unrefined sugars and coconut oil to make them a bit healthier.  

    Oh and just so you know, these also taste delicious with unsalted butter instead of coconut oil if that is what you have in the house. There is nothing wrong with that at all.

    So...who says you can't enjoy an occasional cookie anymore?  Not me.

    Remember what I always say, everything in moderation. And yes, that does include cookies.

    I made these cookies every year for Christmas and Valentine's Day but they are also easy enough to make them all throughout the year.

    These are completely customizable and can be made for whatever season or occasion you want. That's why I love them so much, you can make a dozen cookies and make each one different from the next.

    These cookies are so incredibly freezer friendly too.  Sometimes I freeze a whole batch of them and then simply defrost them on the decorate them however you'd like.

    They still taste delicious, even straight out of the freezer. Yes, my kids love them when they are still completely frozen.

    I place groups of 3 (for each of my kids) in a freezer safe resealable bag to easily pull out for dessert.  And the added bonus is I am not tempted to eat all of them if they are staring at me from my kitchen counter.

    Don't they say "Out of sight, out of mind". There is some validity in that.

    You can add whatever toppings you like; frosting, sprinkles, M & M's, extra sugar, or simply leave them plain. You can get elaborate and creative or keep them simple (like what I do).

    These are super easy to make and the batter freezes well if you just want to make a few at a time.  

    I am definitely not the most fancy baker there is, but I just might be the most simple one that uses real ingredients. 

    Now don't get me wrong, there are days when I daydream about not caring about ingredients or artificial colors and sugars and I just wish I was this incredible, fancy baker. But that will never happen.

    And that's ok. I like being simple and healthy.

    Healthier Sugar Cookies

    Servings: 4 dozen cookies

    Ingredients

    • 1 â…” cups whole wheat flour
    • 1 teaspoon baking soda
    • ½ teaspoon baking powder
    • ½ cup coconut oil room temperature, softened
    • â…“ cup vanilla Greek yogurt
    • ½ cup unrefined sugar
    • ½ cup unrefined brown sugar
    • 1 egg
    • 1 teaspoon pure almond extract

    Instructions

    • Preheat oven to 375 degrees F (190 degrees C). Stir flour, baking soda, and baking powder in a small bowl.
    • Beat coconut oil, yogurt, and sugar with an electric mixer in a large bowl until smooth. Add egg and vanilla extract and beat again. Mix in flour mixture until just incorporated. Roll dough into 1 inch balls and place 2-inches apart onto ungreased baking sheets.
    • Bake in preheated oven until golden, 8 to 10 minutes. Let stand on baking sheet two minutes before removing to cool on wire racks. Allow to cool completely before frosting if desired.
