These sugar cookies are the perfect treat for when you want something just a little bit healthier than traditional cookies. Yes, there is a sugar in them ( I mean, they ARE sugar cookies after all) but I used unrefined sugars and coconut oil to make them a bit healthier. Who says you can’t enjoy an occasional cookie anymore? Not me.
Healthier Sugar Cookies
- 1 2/3 cups whole wheat flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 cup coconut oil room temperature, softened
- 1/3 cup vanilla Greek yogurt
- 1/2 cup unrefined sugar
- 1/2 cup unrefined brown sugar
- 1 egg
- 1 teaspoon pure almond extract
Preheat oven to 375 degrees F (190 degrees C). Stir flour, baking soda, and baking powder in a small bowl.
Bake in preheated oven until golden, 8 to 10 minutes. Let stand on baking sheet two minutes before removing to cool on wire racks. Allow to cool completely before frosting if desired.
You can add whatever toppings you like; frosting, sprinkles, extra sugar, or simply leave them plain.
These are super easy to make and the batter freezes well if you just want to make a few at a time. I also like to freeze the cookies as well. I place groups of 3 (for each of my kids) in a freezer safe resealable bag to easily pull out for dessert. And the added bonus is I am not tempted to eat all of them if they are staring at me from my kitchen counter 🙂
