I intended on making my Dark Chocolate Cupcakes from The Greek Yogurt Cookbook which is available for pre-sale now (please excuse the shameless plug) for my son's birth day party at school. But baseball, football, soccer and homework got in the way and I just didn't have the time. I am sure many of you can relate to not having enough hours in each day! BUT then I remembered seeing this cake mix + Greek yogurt recipe on Pinterest and decided to give it a chance.
I used this Organic Devil's Food Cake Mix from Simply Organic. Basically, this recipe is fool-proof and ridiculously simple. You mix the cake mix with one cup of plain Greek yogurt and 1 cup of water and bake according to the instructions on the package. I figured I'd try it, I mean, how picky could a bunch of 4 years old be, right?
Well, let's just say I was pleasantly surprised how delicious these came out! They were moist, fudgey and really easy! Oh, and see how pretty the frosting is? Well that is Cream Cheese Yogurt Frosting and also one of recipes from my new cookbook (and I am sorry, but yo have to wait until it comes out!). It's also super easy, yummy and of course also made with Greek yogurt 🙂 It might be one of my favorites from the new book, I just can't wait for it to come out soon!! It's scheduled to release in November so go ahead and pre-order it NOW! Sorry for being bossy, I am just sooooo excited! But until then, go try this if you are in a pinch and are looking for a cake recipe with no oil or eggs. It was just what we needed. And those 4 year olds were THRILLED!
