    This delicious Butternut Squash Caramelized Onion Burrata Pizza might look fancy, but it's so simple to make. All the best fall flavors baked in a delicious, nutritious, cheesy pizza.

    I make homemade pizzas every Friday night for my family.  Sometimes I make my own dough using this recipe Knead to Cook and sometimes I buy my dough at Trader Joe's, a pizza restaurant or a grocery store.

    This butternut squash pizza is easy to make, simple and delicious. I mean, come on people....this pizza has caramelized onions, cranberries and creamy burrata cheese!!

    Why You Should Make This Butternut Squash Pizza

    There's never any judgement for simplifying your life. Especially when you work and have kids, go ahead and make your life easier.

    That's where this store-bought naan bread comes in very handy. I bought this 100% whole wheat naan bread at Whole Foods, but I am sure they are in most grocery stores.

    You can easily customize this however you'd like. Use whatever cheese you'd like, although the burrata really is creamy and delicious.

    And there's butternut squash and mushrooms in there too, so it's healthy, right?

    This butternut squash pizza will be ready in under 30 minutes and is always a crowd pleaser.

    Recipe Ingredients for This Butternut Squash Pizza

    • Naan flatbreads - Like I mentioned above, you can either make your own naan bread or buy it from the store. Either way, naan has a wonderful, light texture that is perfect for this pizza crust.
    • Mushrooms - I used already sliced mushrooms for this recipe. Make sure they are rinsed by taking a damp cloth and wiping off and then patted dry.
    • Burrata cheese - If you haven't tried Burrata yet, it's basically a soft and creamy Mozzarella cheese. It's gooey and delicious.
    • Cranberries - I usually buy these dried cranberries which have no added sugars, but they can be quite pricey. I love this recipe from All Day I Dream About Food where Carolyn shows us how to make our own dried cranberries at home with no added sugars!

    Can this butternut squash pizza be made vegan by leaving off the cheese?

    Absolutely. This recipe is so hearty and flavorful even without the cheese.

    How can I store leftovers?

    Place any leftovers in an airtight container or you can wrap with parchment paper and place in a plastic bag in the refrigerator for 3-4 days. This butternut squash pizza tastes best if reheated in the oven by placing on a baking sheet and baking for 10-15 minutes at 350 degrees F.

    Can I use another cheese in this pizza recipe?

    Although I haven't tried any other cheese in here besides burrata and mozzarella, I bet a hard cheese like Manchego, Cheddar and Asiago would be yummy in this pizza.

    Ingredients

    • 2 medium 100% whole wheat naan flatbreads
    • 1 tablespoon olive oill
    • 2 garlic cloves minced
    • 2 yellow onions sliced
    • 2 cups butternut squash cubed
    • 1 cup sliced mushrooms rinsed and patted dry
    • 1 teaspoon salt
    • 1 teaspoon pepper
    • 4 ounces burrata cheese sliced
    • ¼ cup dried cranberries
    • 2 tablespoons fresh sage chopped

    Instructions

    • Preheat oven to 375 and prepare a baking sheet with cooking spray.
    • Heat oil in a large sauce pan. Add garlic, salt and pepper and cook over low heat for 1-2 minutes.
    • Add onions and cook over low heat for 15 minutes, until onions soften and become translucent.
    • Stir well and cook for another 10-15 minutes until onions turn light brown.
    • While onions are cooking, place butternut squash in oven and roast for 15 minutes until they start to soften.
    • Add mushrooms and cook for another 5-10 minutes.
    • Top flatbreads with roasted butternut squash, mushrooms and caramelized onions.
    • Add burrata cheese all over the flatbread.
    • Top with cranberries and sage.
    • Place back into oven for 5-10 minutes until flatbread gets crispy on the bottom.

    Notes

    To store: Wrap in parchment paper and place in a plastic bag in the refrigerator for up to 4 days.
    To reheat: Place on a baking sheet and bake for 10-15 minutes at 350 degrees F.
