Ok, to clarify, you can occasionally have a small piece of cake, but you get the idea. Eating healthy doesn't have to mean borings salads and smoothies.

Why You Should Make This Baby Bok Choy Pizza
It's all about moderation and that's easy enough to say, but sometimes that can be difficult to manage. Just keeping it real here.
This pizza is packed with vitamins and nutrients, and let's be honest, this is anything but boring.
When Jade Asian Greens sent me a whole bunch of scrumptious greens for me to cook with, I was so excited to see Baby Bok Choy! It's one of my favorite leafy greens that I don't seem to eat enough of.
Baby Bok Choy is Chinese cabbage that is mild in flavor but has a wonderful, crunchy texture. Typically used in Asian dishes, Baby Bok Choy is loaded with Vitamin A, C, K, potassium, folate, beta-carotene and amino acids.
But did I mention how crunchy and delicious it is?
I like to add greens to my pizzas to add a bunch of vitamins, minerals and fiber. It's an easy way to add some more nutrition to your diet.
I've added spinach, kale, even mixed baby greens, why not mix it up with bok Choy?
Baby Bok Choy takes less time to cook than full-size Bok Choy and I am all about saving time these days. How adorable are these little guys?

Whenever I've made Baby Bok Choy I've sautéed it, and eaten it as a side dish. Although equally delicious, this was a really fun way to eat it! And besides being super healthy and delicious, this recipe is EASY!
Chopping the Baby Bok Choy was the most difficult part (and it was super duper easy!)
That's just to show you how easy this really is.
And let's be honest with three kids and working full time, I always need easy.

Baby Bok Choy Pizza
Ingredients
- 5 cups baby bok choy ends trimmed and chopped
- 1 tablespoon extra virgin olive oil
- 2 cloves garlic minced
- 1 tablespoon ginger root minced
- ¼ cup onion minced
- 2 cups baby Bella mushrooms sliced
- 2 whole wheat naan bread or flatbread
- ½ cup mozzarella shredded
- 2 tablespoons Romano cheese grated
- 1 teaspoon red pepper flakes
Instructions
- Heat oven to 350 degrees.
- Heat oil in a large skillet, and add garlic, ginger and onion. Sauté for 2-3 minutes, until softened. Add chopped Baby Bok Choy and sliced mushrooms and cook for another 2-3 minutes, until greens and mushrooms are wilted.
- Place naan bread or flatbreads on baking sheet. Top with mozzarella cheese. Add Bok Choy mixture on top of cheese, spreading it evenly between the 2 pizzas. Sprinkle with Romano and red pepper flakes to taste.
- Bake for 10 minutes, until bread is crispy and cheese has melted.
- Cut into slices and serve immediately, while hot.
