    These banana coconut bars are naturally sweet, soft, and chewy with the perfect blend of oats, bananas, and shredded coconut. They’re vegan, gluten free, and dairy free, making them a nourishing option for breakfast or a wholesome treat for dessert. Made with simple pantry ingredients and no refined sugar, these healthy bars are easy to make and full of tropical flavor.

    Why You Should Make These Banana Coconut Bars

    I always use Silk Almond Milk for my smoothies and overnight oats to keep them dairy-free, but I was so excited to see Silk has a new Coconut Almond Blend which I found intriguing. I used the unsweetened version and loved it.

    It's not too coconut-y (I don't love coconut) and has a slight taste, just as if I were baking with coconut oil. I'm hooked.

    I don't know about you but summer has been filled with cookouts, parties and lots of social events so far. We are definitely eating more (and possibly drinking some more cocktails) and it can be more difficult to stay on track with your healthy eating lifestyle.

    These banana coconut bars are a perfect example that you can stay on track and have your treats too.

    Recipe Tips

    Kids love these banana coconut bars too! They won't even miss all of the processed sugars and junk in other cookies or bars. It has the perfect blend of coconut, banana and chocolate.

    Go ahead and add some dried unsweetened dried cherries or another dried fruit, chopped nuts, or even some chia seeds and hemp seeds for added protein and fiber.

    When my kids were little and didn't eat as much, I would slice these into 18 bite sized pieces which was the perfect little snack for them. I would also freeze a bunch for busy days and they would defrost in 15 minutes.

    Ingredients

    • 3 bananas mashed, very ripe
    • ¼ cup 100% pure maple syrup
    • 1 teaspoon pure vanilla extract
    • ⅓ cup Silk Almond Coconut Blend Milk or dairy free milk of your choice
    • ¼ cup coconut oil softened
    • 1 teaspoon cinnamon
    • 1 cup quick oats gluten free
    • ½ cup flax seed ground
    • ¼ cup quinoa flakes
    • ¼ cup shredded coconut unsweetened
    • ½ cup chocolate chips vegan if desired

    Instructions

    • Preheat oven to 350 degrees.
    • In medium bowl, mix together the bananas, maple syrup, vanilla almond milk, coconut oil and cinnamon until well blended.
    • Add the oats, flax seed, quinoa and coconut until thoroughly combined.
    • Add chocolate chips and stir once again.
    • Spray a 9 x 9 pan with cooking spray or line with parchment paper.
    • Spread mixture into prepared pan. Bake in preheated oven for 25-30 minutes until edges are brown and middle is set.

    Notes

    To store in the refrigerator: Place in an airtight container for up to 5 days.
    To store in the freezer: Place in an airtight container for up to 3 months.
