Banana Coconut Bars

These banana coconut bars are naturally sweet, soft, and chewy with the perfect blend of oats, bananas, and shredded coconut.

Instructions

  • Preheat oven to 350 degrees.
  • In medium bowl, mix together the bananas, maple syrup, vanilla almond milk, coconut oil and cinnamon until well blended.
  • Add the oats, flax seed, quinoa and coconut until thoroughly combined.
  • Add chocolate chips and stir once again.
  • Spray a 9 x 9 pan with cooking spray or line with parchment paper.
  • Spread mixture into prepared pan. Bake in preheated oven for 25-30 minutes until edges are brown and middle is set.

Notes

To store in the refrigerator: Place in an airtight container for up to 5 days.
To store in the freezer: Place in an airtight container for up to 3 months.
