Banana Coconut Bars
These banana coconut bars are naturally sweet, soft, and chewy with the perfect blend of oats, bananas, and shredded coconut.

Preheat oven to 350 degrees.
In medium bowl, mix together the bananas, maple syrup, vanilla almond milk, coconut oil and cinnamon until well blended.
Add the oats, flax seed, quinoa and coconut until thoroughly combined.
Add chocolate chips and stir once again.
Spray a 9 x 9 pan with cooking spray or line with parchment paper.
Spread mixture into prepared pan. Bake in preheated oven for 25-30 minutes until edges are brown and middle is set.
To store in the refrigerator: Place in an airtight container for up to 5 days.
To store in the freezer: Place in an airtight container for up to 3 months.
