This Spicy Cornbread Stuffed with Cheese is simple to make and incredibly delicious. Say goodbye to your ordinary cornbread, this one has a Mexican twist, gluten free and is loaded with spices and cheese!
I know this isn't one of my typical, healthy recipes I usually create. This recipe is just one of many in The Everything Wheat Free Diet Cookbook and people keep telling me how much they love it!
I am all about spicy, I am just not a huge cheese lover. Now don't scream at me just yet, it has nothing to do with nutrition, it's purely taste.
I like hard cheeses like Manchego, Asiago, Cheddar or Pepper Jack, I just don't love them. You know what I mean?
But there is something about cheese stuffed in cornbread that is simply divine.
Especially fresh out of the oven when the cheese is oozing out the center.
You can definitely use less cheese if you'd like ( I have before) but the consensus seems to be that this is the perfect amount of cheese.
So why change perfection?

What I love about this cornbread is that even though it is gluten free, it has a wonderful texture. I find many gluten free breads don't rise and have a dry, crumbly texture.
Trust me, after writing The Everything Wheat Free Diet Cookbook I try understand how difficult gluten free baking can be. The flours can be tough to work with and that is why baking is so precise.
Even though it may take me many, many tries to get the texture just right, once I get there, I just leave it alone. And I keep making it using those exact measurements.
This delicious cornbread goes perfectly with any soup, chili or just about any main dish. I just made it the other day with my Salsa Pasta Chicken Bake and the family loved them together.

Funny, my kids didn't like spicy foods the they were younger either. Thank goodness they all like spicy now!
You can easily leave out the chiles and red pepper flakes if you want less of a spicy flavor. When my kids didn't like spicy foods (or random green stuff) so I have had to do that before and it still tastes delicious.
Sometimes I will make two loaves at a time, one boring cornbread (just kidding, it is not boring, just not spicy) and another that is filled with spices and chili peppers. This way, everyone is happy and we have less complaining from the kids.
Yes, you definitely can freeze this. Wrap the cornbread tightly in plastic wrap and place in a large freezer bag and it will last up to 3 months.
The difference with this cornbread is that it should be reheated in the oven to maintain the texture and get the cheese melted.
While this cornbread is delicious with soup, it pairs beautifully with so many main dishes. Slow Cooker Pulled Pork, Easy Balsamic Chicken and White Chicken Chili would be incredible with this spicy cornbread.

Spicy Cornbread Stuffed with Cheese
Ingredients
- 1 cup cornmeal yellow or white
- 1 cup rice flour
- ¼ cup light brown sugar
- 3 teaspoons gluten-free baking powder
- 1 teaspoon salt
- ¼ teaspoon cumin
- 1 teaspoon dried red pepper flakes or to taste
- ½ cup buttermilk
- ½ cup plain Greek yogurt
- 2 eggs beaten
- 2 tablespoons unsalted butter melted
- ½ cup green chilie or jalepeno peppers chopped
- ½ cup grated pepper jack or Cheddar cheese
Instructions
- Preheat oven to 400°F. In a large bowl, mix together the cornmeal, flour, sugar, baking powder or baking soda, salt, cumin, and red pepper flakes.
- Mix in the buttermilk, Greek yogurt, eggs, and melted butter.
- Prepare an 8" square baking pan with nonstick spray. Place half of the batter in the pan. Sprinkle with peppers and cheese. Cover with the rest of the batter. Bake for 20–25 minutes. Let sit for a few minutes before slicing.
