Say goodbye to your ordinary cornbread, this one has a Mexican twist and is gluten free and loaded with delicious spices and cheese!
I know this isn’t one of my typical, healthy recipes. I created this for The Everything Wheat-Free Diet Cookbook a few years ago and people keep telling me how much they love it!
I am all about spicy, I am just not a huge cheese lover. Now don’t scream at me just yet, it has nothing to do with nutrition, it’s purely taste.
I like some harder cheeses like Manchego, Asiago, Cheddar or Pepper Jack, I just don’t love them. You know what I mean?
But there is something about cheese stuffed in cornbread that is simply divine.
But this bread is really really good. Especially fresh out of the oven when the cheese is oozing out the center.
You can definitely use less cheese if you’d like ( I have before) but the consensus seems to be that this is the perfect amount of cheese. So why change perfection?
You can easily leave out the chiles and red pepper flakes if you want less of a spicy flavor. I know two of my kids don’t love spicy foods (or random green stuff) so I have had to do that before and it still tastes delicious.
Sometimes I will make two loaves at a time, one (boring) one (just kidding, it is not boring, just not spicy) and another that is filled with spices and chili peppers. This way, everyone is happy and we have less complaining from the kids.
And my husband and I basically have our own cornbread that we can share. Everyone wins.
What I love about this cornbread is that even though it is gluten free, it has a wonderful texture. I find many gluten free breads don’t rise and have a dry, crumbly texture.
Trust me, after writing The Everything Wheat Free Diet Cookbook I try understand how difficult gluten free baking can be. The flours can be tough to work with and that is why baking is so precise.
Even though it may take me many, many tries to get the texture just right, once I get there, I just leave it alone. And I keep making it using those exact measurements.
Baking is not like cooking at all, you can’t just through in a little more flour or baking powder like you do with seasonings and spices when you are cooking. You need to follow the instructions exactly how they are listed.
So basically, I did the work for you. it only took me 4 times to get it right.
But I am super picky when it comes to texture, especially of my gluten free recipes. Don’t even get me started about that one recipe that I had to make 11 TIMES to get it right.
It still makes me mad when I think about it.

Spicy Cornbread Stuffed with Cheese
Ingredients
- 1 cup cornmeal yellow or white
- 1 cup rice flour
- 1 โ4 cup light brown sugar
- 3 teaspoons gluten-free baking powder
- 1 teaspoon salt
- 1 โ4 teaspoon cumin
- 1 teaspoon dried red pepper flakes or to taste
- 1 โ2 cup buttermilk
- 1 โ2 cup plain Greek yogurt
- 2 eggs beaten
- 2 tablespoons unsalted butter melted
- 1 โ2 cup green chilie or jalepeno peppers chopped
- 1 โ2 cup grated pepper jack or Cheddar cheese
Instructions

Preheat oven to 400ยฐF. In a large bowl, mix together the cornmeal, flour, sugar, baking powder or baking soda, salt, cumin, and red pepper flakes.

Mix in the buttermilk, Greek yogurt, eggs, and melted butter.

Prepare an 8" square baking pan with nonstick spray. Place half of the batter in the pan. Sprinkle with peppers and cheese. Cover with the rest of the batter. Bake for 20โ25 minutes. Let sit for a few minutes before slicing.
