All of these would be even more delicious with Apple Chai Latte or Low Carb Bulletproof Hot Chocolate. Or if you feel like a cocktail, you can try this Spiked Apple Cider, Slow Cooker Mulled Wine or Skinny Peppermint Eggnog!

Also, my cookbooks are both on sale now and would make a great gift! The Everything Wheat Free Diet Cookbook and The Greek Yogurt Cookbook are both the lowest prices I have seen!

Why You Should Make These Dark Chocolate Pomegranate Bites

I think many of you know that I adore Trader Joe's.   There is a relatively new find that pair two of my favorites together... Dark chocolate + pomegranate seeds = HEAVEN.

Of course I had to try to re-create these babies.  Let's just say that I have no clue how to get them into tiny, individual chocolate covered seeds without making the hugest disaster in my kitchen.

Pomegranates are so incredibly small which made it impossible difficult to create. SOOOOOOO...I made them into these kind of bites...or clusters...or blobs maybe?

These are perfect for when you just want a little something sweet and don't want to commit to a full dessert. Sometimes you just need a little bite.

These dark chocolate pomegranate bites are so easy to make with only two simple ingredients. They look so pretty and fancy even though they take minutes to prepare.

These are nothing crazy at all, but they are perfect to satisfy that sweet tooth.

    Recipe Tips

Go ahead and get creative with this simple recipe. You can make these with blueberries, raspberries and even a mixture of a bunch of different fruits.

I like to also sprinkle a little sea salt on top for when I am craving a sweet and salty snack.

You can also use sugar free chocolate if you are looking to cut back on sugar. They taste just as delicious as the sugar sweetened kind with same crunchy texture.

    Ingredients

    • ¾ cup pomegranate seeds OR 5.3 ounce container of pomegranate seeds from Trader Joe's
    • 2 cups high quality dark chocolate I used 85% cacao

    Instructions

    • Place wax paper onto a large baking sheet.
    • Melt the chocolate in a small sauce pan over very low heat, stirring constantly until completely melted.
    • By spoonfuls, dunk the pomegranate seeds into melted chocolate and spoon onto baking sheet until all seeds are finished.
    • Place in the refrigerator to harden. ENJOY!

    Notes

I calculated the serving size based on making 24 spoonful bites with 2 bites in a serving.
It's hard to calculate because everyone might make different size bites.

To store in the freezer: Place in air tight container for up to 3 months.
