    This Roasted Tomato Basil Pizza makes a simple, delicious, healthy, vegetarian meal that's perfect any night of the week!

    Your house is going to smell AMAZING!  I love roasting tomatoes and garlic and now there are so many awesome varieties of tomatoes out there.  

    I used red, orange and yellow heirloom tomatoes, but you can use whatever you have in the house or whatever you find at the store.  Try all of the different colors!  

    The orange and yellow tomatoes taste a little sweet, have a mild flavor and  are less acidic than the typical red ones.  This pizza is so simple to prepare, it's perfect for those busy weeknights and it just might get your picky kids to eat tomatoes!

    And did I mention just how incredible your house is going to smell?

    Roasting tomatoes and garlic has always been my favorite for a variety of dishes. This pizza is light, packed with delicious flavors and ridiculously easy to make.

    The tomatoes are so bright and colorful and contain a ton of vitamins and minerals. Yes, bright and colorful even if you just use good old faithful red tomatoes.

    Oh and feel free to go ahead and add some more vegetables if you'd like. Think of this as a "base" for other pizza recipes.

    I have added spinach (my personal favorite) colorful bell peppers and onions. All delicious!

    Do you guys like naan?  It's the only Indian type food that I like (probably not surprising) but it's incredible.  

    Give me some naan and hummus or guacamole and I am one happy girl.  You can find it pre-made in the bakery department of your grocery store.

    Seriously, you need to try it.

    I know there are recipes for homemade naan floating around the internet world, but I have never been successful with homemade breads of any type. Not pumpkin or banana bread, I mean good old regular bread.

    But hey, maybe you want to check it out? For me I will just keep it simple and buy it pre-made from the grocery store.

    It's soft and doughy and perfect for so many different recipes. Or like I said, just eating plain or with butter or guacamole.

    It's AMAZING.

    I've also made this as a super duper easy appetizer!  Just slice it into bite size pieces or strips and voila!

     You have a pretty, easy appetizer!  And everyone loves pizza, right?

    Roasted Tomato Basil Pizza

    Ingredients

    • 6 heirloom tomatoes I use red, yellow and orange
    • 2 cloves garlic minced
    • ½ teaspoon salt
    • ¼ chopped fresh basil
    • 1 cup shredded mozzarella cheese
    • 2 naan breads or whole grain flat breads
    • additional basil for topping optional

    Instructions

    • Preheat oven to 350 degrees.
    • Place sliced tomatoes on a baking sheet lined with parchment paper. Sprinkle with garlic, salt and basil.
    • Place in the oven and roast for 30-35 minutes.
    • Place naan bread or flatbreads on baking sheet. Top with roasted tomatoes. Sprinkle with cheese and bake for 10 minutes until bread is crispy and cheese has melted.
    • Top with additional basil. Serve immediately.

      This looks delightful! I had to laugh at the thought of pizza as an appetizer. Just because I would take the entire plate and hide in the corner until I had eaten it up.

      I love naan bread! I think it's a super fun idea to use it also for a quick pizza. No need to buy a frozen one, when it's so easy to make something as easy and better homemade like this!

      Those colors are so beautiful! And yes, there is a regular supply of whole wheat naans in my freezer for quick pizzas like these. They are so handy!
