    Apple Cinnamon Pancakes {Vegan, Dairy-Free, Whole Grain}

    The whole family will love these light, fluffy and super delicious Apple Cinnamon Pancakes. Even those that aren't vegan will ask for another helping!

    My whole family loves pancakes.  I don't make them often mainly due to the lack of time in the mornings, but when I do I have to double-sometimes triple- the recipe to make sure I have enough for the 5 of us.  

    We all like to eat, and we all like to eat pancakes.  So why not make ones that are healthier with whole grains and no refined sugar?  

    These.  Are.  Awesome.

    I wanted to mix it up a bit and steer away from ever so popular Pumpkin Protein Pancakes and Easy Vegan Gingerbread Pancakes (which are made all year long) and the Coconut Flour Pancakes, Lemon Chia Seed Pancakes and definitely my Strawberry Vanilla Pancakes (which are always a crowd pleaser).  

    Recipe Tips

    What I love about these pancakes is that they are incredibly freezer friendly. I like to make a double or even triple batch and freeze some for those crazy, busy mornings.

    I simply freeze them in batches of 2-3 pancakes (usually whatever is one serving for you) to make it easy to defrost one serving at a time. Why defrost 10 of them if you are only going to eat 2?

    I like to take them out of the freezer and let them sit on the counter while I am enjoying my tea and reading emails. This way they are just about completely defrosted in 15 minutes or so and I can just pop them in the toaster over to heat them up.

    So easy and my kids are thrilled to have pancakes, on a weekday no less! We usually save those for lazy weekend mornings.

    If your batter becomes thick while it is sitting there waiting to be cooked, simply add a bit of almond milk or water to thin them out. I start with usually one or two tablespoons at a time and add a little more if necessary.

    I have had readers tell me that have added other fruits too instead of apples if that is what they had in the house. Go for it!

    Personally, I love the way these pancakes come out and they smell like heaven, which is always an added bonus. There is just something so comforting about apple and cinnamon together.

    Apple Cinnamon Pancakes

    Ingredients

    • 2 cups whole wheat flour
    • 2 teaspoon baking powder
    • ½ teaspoon baking soda
    • ¼ cup ground flax
    • 1 teaspoon cinnamon
    • ½ teaspoon salt
    • ¼ cup 100% maple syrup
    • ½ cup unsweetened applesauce
    • 2 cups almond milk
    • ½ cup apple chopped

    Instructions

    • Mix together flour, baking powder, baking soda, flax, cinnamon and salt in a medium bowl.
    • Mix together maple syrup, applesauce and milk in a separate bowl.
    • Pur milk mixture into flour mixture and stir until just combined being careful not to over mix. The batter will be thick.
    • Add chopped apples and stir to combine.
    • Preheat a greased griddle on medium-low heat for 2-3 minutes to get it hot. Place about ⅓ cup of batter onto hot griddle and cook for 1-2 minutes on each side, until golden brown.
    • Top with extra maple syrup and additional cinnamon and chopped apples if desired.

    Notes

    To store in the refrigerator: Place in an airtight container for 5-7 days.
    To store in the freezer: Place in an airtight container for up to 3 months.
