Even if you think you don’t like zucchini, I urge you to try this! This is so amazing and you won’t even miss the wheat, gluten or carbohydrates. Go ahead, treat these zucchini noodles as you would regular noodles… I’ve made these withe marinara sauce, pesto sauce, primavera…the possibilities are endless 🙂
Zucchini Noodles with Parmesan
Ingredients
- 4 zucchini
- 2-3 cloves garlic minced
- 1 Tablespoon grapeseed oil
- salt and black pepper to taste
- 3 Tablespoons grated Parmesan cheese
Instructions

Cut zucchini into thin, noodle-like strips using a peeler or mandolin.

Heat oil in a large skillet over medium high heat.

Add zucchini and garlic; cook and stir until just tender, about 5 minutes.

Season to taste with salt and pepper. Sprinkle with Parmesan cheese.
