Creamy Healthy Coleslaw

Lightened up, but still delicious, this Healthy Coleslaw will be a hit all summer long!

Ingredients

  • 1 pound shredded white cabbage
  • ½ cup shredded carrots
  • cups nonfat plain Greek yogurt
  • ½ cup apple cider vinegar
  • ¼ cup unrefined sugar or Monk fruit to make it sugar free
  • 1 tablespoon Dijon mustard
  • 3 tablespoons dried minced onion

Instructions

  • In a large bowl, combine the cabbage and carrots.
  • In a medium bowl, combine the remaining ingredients.
  • Pour the Greek yogurt mixture over the cabbage and carrots. Mix well and chill for 30 minutes before serving.

Notes

To store: Place in airtight container in the refrigerator for up to 5 days.
