Lemon Orzo with Toasted Pine Nuts

Ingredients

  • 16 ounces orzo
  • 1 tablespoon extra virgin olive oil
  • ½ lemon juiced
  • ¼ cup fresh parsley minced
  • 1 clove garlic minced
  • ¼ cup pine nuts toasted
  • 2 tablespoons Parmesan cheese
  • salt and pepper

Instructions

  • Cook orzo according to instructions, usually about 8-10 minutes.
  • Drain well. Do not run under water.
  • In a small bowl, mix lemon juice and olive oil.
  • Transfer orzo to serving bowl, add garlic, drizzle with oil and lemon juice and season with salt & pepper.
  • Add lemon zest, pine nuts and parsley and toss.  Top with parmesan cheese.

Notes

To store: Place in the refrigerator in an airtight container for up to 5 days.
