Strawberry Frozen Yogurt

Deliciously light and refreshing, this Strawberry Frozen Yogurt will be your new, healthy, favorite treat!

Ingredients

  • ¾ cup almond milk I used unsweetened vanilla almond milk but you can use whatever milk you want
  • ¼ cup Monk fruit
  • 4 cups plain Greek yogurt
  • 2 cups strawberries fresh or frozen

Instructions

  • Place strawberries in a high speed blender and blend until smooth.
  • In a medium bowl, mix the milk and sugar until the sugar is dissolved (about 1 to 2 minutes on low speed if using a mixer).
  • Stir in the yogurt and strawberry puree.
  • If using an ice cream maker: Freeze according to manufacturers instructions- minimum 2 hours until it hardens.  (I spooned it into a tall, upright plastic container to place in the freezer).
  • If you aren't using an ice cream maker: Place mixture in a loaf pan or square baking dish and freeze for 30-60 minutes, making sure to stir a few times.

Notes

To store: Place in an airtight container in the freezer for up to 2 months. 
To serve: Allow to sit on the counter for 10 minutes before serving to allow to soften.
