- 6 ounces sugar free dark chocolate
- 8 ounces cream cheese
- 1 teaspoon liquid stevia
- 2 tablespoons cacao powder
- 1 cup walnuts chopped
- 1 teaspoon pure vanilla extract
- 2 tablespoons coconut flour
Melt dark chocolate in the microwave for 60 seconds or in a stovetop until completely melted. Combine melted chocolate with cream cheese, vanilla extract, and liquid stevia.
Add cacao powder and coconut flour, stir until combined.
Fold in chopped walnuts and mix to combine. Refrigerate the batter for one hour to harden.
Once the mixture has a stiff consistency, it is ready. Shape into ¾ to 1 inch balls, as desired.
Coat your chocolate truffles with coconut flour, ground walnuts, or cacao powder. Refrigerate for one more hour before serving.
- Add one or two tablespoons of your favorite liqueur for an added punch. You can add Kahlua, Bailey's Irish Creme or even chocolate liqueur.
- Coat the truffles with melted chocolate for a crunchy outer chocolate shell.
- Store these truffles in the fridge, just like cheesecake. Keep in an airtight container for up to 7 days.
