Zucchini Noodles with Parmesan

  • 4 zucchini
  • 2-3 cloves garlic minced
  • 1 Tablespoon grapeseed oil
  • salt and black pepper to taste
  • 3 Tablespoons grated Parmesan cheese


  • Cut zucchini into thin, noodle-like strips using a peeler or mandolin.
  • Heat oil in a large skillet over medium high heat.
  • Add zucchini and garlic; cook and stir until just tender, about 5 minutes.
  • Season to taste with salt and pepper. Sprinkle with Parmesan cheese.
