Zucchini Noodles with Parmesan
Dinner, Low carb, Gluten-free, Wheat-free
  • 4 zucchini
  • 2-3 cloves garlic minced
  • 1 Tablespoon grapeseed oil
  • salt and black pepper to taste
  • 3 Tablespoons grated Parmesan cheese
  1. Cut zucchini into thin, noodle-like strips using a peeler or mandolin.
  2. Heat oil in a large skillet over medium high heat.
  3. Add zucchini and garlic; cook and stir until just tender, about 5 minutes.
  4. Season to taste with salt and pepper. Sprinkle with Parmesan cheese.
