Buffalo Chicken Meatballs

Juicy and spicy Buffalo Chicken Meatballs are the perfect appetizer for parties or a snack for a game day. Low in carbs, easy to make and super delicious!

Ingredients

  • 1 pound ground chicken
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • 1 large egg
  • ¼ cup green onions chopped, more for serving
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • cup Buffalo sauce more for serving
  • ½ cup almond flour

Instructions

  • Preheat the oven to 400 degrees F. Spray baking tray or line with parchment paper.
  • In a large bowl mix together chicken, onion powder, garlic powder, egg, green onions, salt, black pepper, buffalo sauce, and almond flour.
  • Use your hands to form meatballs about the size of golf balls.
  • Arrange them on a prepared baking tray and brush the meatballs with oil.
  • Bake for 20 -25 minutes.
  • Remove from the oven and drizzle with buffalo sauce and gently toss the meatballs or just serve the meatballs with buffalo sauce on the side.

Notes

To store in the refrigerator: Place in airtight container for up to 5 days.
These chicken meatballs are freezer friendly so make a double batch and freeze some for later. Place in an airtight container and place in the freezer for up to 3 months.
