Chicken Stir Fry

This delicious Chicken Stir Fry is so easy to make and ready in about 30 minutes. This Chicken Stir Fry recipe is loaded with flavor, low carb, sugar free and gluten free!

Ingredients

  • 1 pound chicken breast cut into pieces
  • ½ green pepper chopped into larger pieces
  • ½ red pepper chopped into larger pieces
  • ½ medium chopped
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon sesame oil
  • ¼ cup chicken broth
  • 3 tablespoons liquid aminos or soy sauce
  • 2 teaspoons brown sugar alternative or regular brown sugar if not sugar free
  • 2 teaspoons garlic minced
  • 2 teaspoons ginger paste
  • salt and pepper to taste

Instructions

  • Heat the olive oil in a large skillet over medium high heat on the stove.
  • Add the chicken to the skillet, and season with salt and pepper to taste.
  • Saute the chicken until it is about halfway cooked.
  • Mix the peppers and onions into the skillet, and saute until the vegetables begin to become tender, and the chicken is cooked through.
  • In a bowl, whisk together the ingredients for the sauce.
  • Pour the sauce over the chicken and vegetables, and saute for several minutes before serving.
  • Top with sesame seeds if desired.

Notes

To store in the refrigerator: Place in an airtight container for up to 5 days.
To store in the freezer: Place in an airtight container for up to 3 months.
