Fudge Keto Chocolate Brownies

Ingredients

  • 10 tablespoons butter softened
  • 3 eggs room temparture
  • cup Monk Fruit or other sugar free alternative
  • ½ cup Almond flour
  • ¼ cup cacao or cocoa powder
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup sugar free chocolate chips
  • ½ teaspoon vanilla extract

Instructions

  • Preheat oven to 350 degrees F.
  • Grease an 8 x 8 pan with spray, coconut oil or butter.
  • In a mixing bowl, cream together butter, sugar and vanilla for about 2 minutes.
  • Add eggs one at a time, mixing well. Set aside.
  • In another bowl, whisk almond flour, cocoa powder, baking powder, salt and chocolate chips. Mix until all chocolate chips are mixed throughout.
  • Slowly add the flour mixture to the wet ingredients.
  • Mix until all flour mixture is incorporated.
  • Pour into prepared pan and spread evenly.
  • Bake for 18 to 20 minutes until the center is set and the edges are separating from the sides.

Notes

Creaming the butter and sugar together is the key to moist, fudge brownies.
I used a greased 8 x 8 pan, you can also line with parchment paper.
