Watermelon Mint Salsa
Course: Appetizer
Servings: 3 -4 cups

  • 1 small personal size watermelon
  • 1 clove garlic minced
  • 2 tablespoons onion minced
  • 3 tablespoons lime
  • 1 teaspoon lime zest
  • 1 tablespoon fresh cilantro chopped
  • 1/2 large bell pepper seeded and chopped
  • 2 tablespoons fresh mint chopped
  • 1 tablespoon jalapeƱo seeded and minced
  • salt to taste
  1. Scoop out watermelon and chop into bite size pieces.
  2. Place in colander with a bowl underneath it to save all the juice.
  3. Place in the refrigerator overnight.
  4. The next day, mix all the ingredients in a medium bowl and put back into the refrigerator for at least an hour to combine flavors.
  5. When ready to serve, place into watermelon bowl and serve cold.
