Green Tea Matcha Chia Pudding Parfaits

  • 1 cup almond milk
  • 2 teaspoons 100% maple syrup optional
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon green tea matcha powder
  • 4 tablespoons chia seeds
  • pineapple chunks and shredded coconut for topping
  1. Place the first four ingredients in a blender and blend for 30 seconds.
  2. Pour into a bowl and stir in chia seeds. Mix well and cover with a lid.
  3. It may look watery, but allow it to sit overnight (or at least a few hours) for it to thicken.
  4. After it thickens, arrange in layers for parfait. Enjoy!
