Roasted Vegetable Turkey Frittata

extra virgin olive oil

roasted vegetables

cooked turkey
chopped

large eggs
1/2
cup
milk
1/2
teaspoon
salt

tablespoon
fresh basil
chopped

shredded cheddar cheese
Instructions
Preheat oven to 400 degrees.
Heat olive oil in 10 inch
skillet
over low-medium heat.
Add roasted vegetables and turkey. Mix well for a few minutes.
In a medium bowl, mix together eggs, milk and salt until thoroughly combined.
Add basil and cheddar cheese to egg mixture.
Pour mixture into skillet. Remove from heat.
Place in preheated oven and bake for 15-20 minutes until it puffs up, the middle is set and the edges are light brown. Let cool before serving.
