Sweet Potato Kale Quinoa Skillet

Ingredients

olive oil

cloves
garlic
minced

small onion
chopped
1/2
teaspoon
salt

tablespoon
fresh sage

small white beans
rinsed and drained
2
pounds
sweet potatoes
peeled and cut into cubes
16
ounces
kale
1 1/2
cup
vegetable broth
1
cup
quinoa
Instructions
Heat oil, garlic and onion in a
large skillet
over medium heat.
Cook for 2-3 minutes until onions are translucent.
Stir in sweet potatoes,salt and sage. Cook for about 5 minutes.
Add beans, broth and quinoa. Bring to a boil.
Cover and reduce heat to low.
Cook for 15-20 minutes until liquid is gone.
Add kale and still until wilted.
