Pumpkin Spice Overnight Oats are healthy, vegan and gluten-free!
Pumpkin Spice Overnight Oats
Servings: 4 servings
Ingredients
  • 2 cups oats
  • 2 cups almond milk
  • 1/4 cup chia seeds
  • 1 teaspoon 100% maple syrup
  • 1 teaspoon cinnamon
  • 1 teaspoon pumpkin spice blend of nutmeg, cinnamon, allspice
  • 1 cup pumpkin puree not pumpkin pie filling
  • 3 scoops protein powder
  • pumpkin seeds pepitas for topping
Instructions
  1. Place all of the ingredients except for pumpkin seeds in a small bowl or jar.
  2. Stir well and cover.
  3. Place in the refrigerator overnight.
  4. Top with pumpkin seeds.
  5. Eat and enjoy!
