Winter Kale Bean Sausage Stew

Deliciously light and healthy, this White Bean Kale and Sausage Stew will be your new favorite healthy comfort food!

Ingredients

  • 1 tablespoon olive oil
  • ½ cup onion chopped
  • 1 pound sausage pork or turkey, sliced
  • 1 zucchini cut into ½ inch slices
  • ½ red bell pepper chopped
  • 3 garlic cloves peeled and crushed
  • ½ cup mushrooms chopped
  • 1 cup chicken broth
  • 32 ounces white beans I used Cannellini beans
  • 3 plum tomatoes chopped
  • ¼ teaspoon fennel
  • teaspoon red chili flakes
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 6 cups kale chopped

Instructions

  • Heat oil in a large skillet over medium-high heat. Sauté onion and sausage 5-6 minutes or until sausage is browned.
  • Add zucchini, mushrooms and garlic; cook 2 minutes. Add remaining ingredients except kale; bring to a boil. 
  • Cover, reduce heat, and simmer 10 minutes or until thoroughly heated Add kale and allow to wilt.
  • Remove from stove when kale is wilted but still bright green.  Serve immediately.

Notes

To store in the refrigerator: Place in an airtight container for up to 5 days.
To store in the freezer: Place in an airtight container for up to 3 months.
