Chocolate Truffles

Easy to make, no-bake Chocolate Truffles! They're smooth, creamy, and taste like chocolate cheesecake. Low carb, sugar free and gluten free.

Ingredients

  • 6 ounces sugar free dark chocolate
  • 8 ounces cream cheese
  • 1 teaspoon liquid stevia
  • 2 tablespoons cacao powder
  • 1 cup walnuts chopped
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons coconut flour

Instructions

  • Melt dark chocolate in the microwave for 60 seconds or in a stovetop until completely melted. Combine melted chocolate with cream cheese, vanilla extract, and liquid stevia.
  • Add cacao powder and coconut flour, stir until combined.
  • Fold in chopped walnuts and mix to combine. Refrigerate the batter for one hour to harden.
  • Once the mixture has a stiff consistency, it is ready. Shape into ¾ to 1 inch balls, as desired.
  • Coat your chocolate truffles with coconut flour, ground walnuts, or cacao powder. Refrigerate for one more hour before serving.

Notes

  • Add one or two tablespoons of your favorite liqueur for an added punch. You can add Kahlua, Bailey's Irish Creme or even chocolate liqueur.
  • Coat the truffles with melted chocolate for a crunchy outer chocolate shell.
  • Store these truffles in the fridge, just like cheesecake. Keep in an airtight container for up to 7 days.
