Cranberry Biscotti
This delicious cranberry biscotti is simple to make, low carb, sugar free and gluten free!

- 1 ½ cup almond flour
- 1 egg
- ⅓ cup monk fruit
- ¼ cup almond milk
- 3 tablespoons coconut flour
- ½ teaspoon baking powder
- ⅓ cup unsweetened dried cranberries
- 1 teaspoon vanilla extract
- ½ teaspoon almond extract optional
Preheat the oven to 350F degrees and line a baking sheet with parchment paper or silicone sheet.
In a bowl place all the dry ingredients and mix well.
Add the almond milk, eggs, vanilla, almond extract and mix until you get a moldable dough.
Fold in the cranberries and form a rectangle with the dough. Place the dough on the baking sheet and bake for 15-20 minutes or until the top has golden.
Remove from the oven and allow to cool completely for at least 10 minutes before slicing.
Once it's completely cool, slice into 12 pieces (or you can slice into 24 mini slices) and lay each piece on the baking sheet. Bake for another 5-10 minutes until toasted, making sure to keep checking to prevent overcooking.
Allow to cool before eating.
To store in the refrigerator: Place cooled biscotti in an airtight container and store for up to 5 days.
To store in the freezer: Place cooled biscotti in an airtight container or wrap in parchment paper and place in a plastic bag and freeze for up to 3 months.
You can drizzle with melted white or milk chocolate if you'd like for some added sweetness.
Orange extract be would a wonderful addition to this biscotti. Add 1 teaspoon of orange extract instead of the vanilla! Cranberry and orange are a match made in heaven.
