Crispy Mint Chocolate Chip Balls

Ingredients
  • 1/2 cup natural peanut butter
  • 1/2 cup 100% maple syrup can use honey but it won't be vegan anymore
  • 1/2 teaspoon pure vanilla extract
  • 1 cup oats
  • 1/4 cup ground flax seed
  • 1/2 cup crispy brown rice cereal
  • 1/4 cup mini chocolate chips
  • 1/4 teaspoon mint extract
  • 1/4 cup green tea matcha powder
Instructions
  1. Mix all of the ingredients together in a medium size bowl until thoroughly combined.
  2. Place the bowl in the refrigerator for 10-15 minutes to harden.
  3. Remove from the refrigerator and roll into 1 inch balls.
  4. Store in the refrigerator in an airtight container for up to 5 days (if they last that long!)
