Baked Cauliflower Bites

These cauliflower bites are perfectly crispy, yet baked (!) with a light lemon flavor and a creamy tzatziki dipping sauce. They're perfect for a party or an after-school snack at home.

Ingredients

  • For the cauliflower bites:
  • 1 cup whole wheat flour can also use almond flour for gluten free and low carb
  • ½ cup almond milk
  • cup water
  • 1 tablespoon lemon pepper
  • teaspoon sea salt
  • 1 tablespoon lemon juice
  • ½ head of cauliflower chopped into 1.5" pieces
  • For the tzatziki sauce:
  • cup plain Greek yogurt
  • cup shredded cucumber I used my finest section of the grater
  • 1 tablespoon lemon juice
  • 1 tablespoon extra virgin olive oil
  • ¼ teaspoon sea salt
  • teaspoon ground pepper

Instructions

  • Preheat oven to 450 degrees.
  • Combine the batter ingredients in a medium mixing bowl.
  • Then, dip and cover each cauliflower piece completely.
  • On a parchment lined baking sheet either lay them out in a single layer, or lay them on top of wire rack over the baking sheet so that the excess batter can drip off.
  • Bake for 15 minutes, then flip them over and bake for another 15 minutes.
  • Meanwhile, combine the sauce ingredients in a small bowl.
  • Remove cauliflower from oven and enjoy immediately with the sauce!

Notes

To store: Place in an airtight container for up to 3 days.
Place in oven at 300 degrees F for 10 minutes to reheat so they stay crispy.
