Prepare tuna cakes by mixing all of the ingredients together in a medium bowl.
Form into 5 palm sized patties.
Place in a sauce pan covered in nonstick cooking spray and cook over medium heat for 3-4 minutes on each side.
Remove from heat.
To prepare the salsa, mix all of the ingredients together and serve on top tuna cakes.
Serve over a bed of spinach or wrapped up in a lettuce wrap.
