Prosciutto Fig Quesadillas
Servings: 4 servings
  • 4 cups arugula
  • 2 green onions chopped
  • 2 cloves garlic diced
  • 1/2 cup goat cheese
  • 6 pieces prosciutto
  • 6 fresh figs sliced into 1/4 inch pieces
  • 6 to rtillas I used 6 inch whole grain
  1. Mix the arugula, garlic and onions in a large skillet over medium heat until wilted, about 3 minutes.
  2. Remove from heat and add cheese. Mix well.
  3. Place tortillas on skillet or griddle prepared with nonstick cooking spray over medium heat. Place arugula mixture on half of the tortilla and top with 1 piece of prosciutto and chopped figs.
  4. Cook over medium heat for 1-2 minutes on each side until golden brown, making sure to flip over to cook evenly.
  5. Remove from heat and slice in half. Serve immediately.
