This is for all of those people that think it’s hard to stay hydrated on those long, hot days of summer. Light, refreshing and delicious Watermelon Mint Slush.

I hope you are enjoying your summer! I don’t know about you, but I really love the idea of not having a hard schedule every day. It’s nice to be able to go to the pool, a friend’s house or the beach and just kind of roll with it.

My oldest plays travel baseball which is so much fun, but also a huge commitment. It’s a good thing he loves to play and we all love to watch him. It’s also nice to have at least one thing scheduled for the day.

 The younger two also play summer baseball which keeps us busy as well. I will be posting less recipes since my little guys are keeping me busy.  Between swim lessons, baseball and work… I can barely cook as much as I’d like to.

Good thing this recipe is so incredibly easy to make that not too much time is needed.  Summer is always so busy and the days seem to fly by!

It’s also hard to stay hydrated in the summer. It’s so hard which is strange since it’s really hot out. But because it’s so hot, we are sweating more and need more electrolytes and hydration.

I am absolutely not saying that this refreshing and delicious Watermelon Mint Slush should take the place of water by any means. Water is absolutely necessary and we need to drink a good amount of it. This fun slush just adds some more flavor and man is it tasty!

The only sugar in here is natural sugar from the watermelon. It’s naturally sweet which is perfect.  You can also go ahead and add a little sparkling water if you want some bubbles.

Watermelon Mint Slush

Servings 4 servings (each watermelon half is 2 servings)

Ingredients

  • 1 personal sized watermelon cubed (approximately 2 cups)
  • juice from 1 lime
  • 2 cups of ice
  • 1/4 cup fresh mint leaves torn
  • 1/2 cup vodka optional

Instructions

  1. Slice a small, personal sized watermelon is half and spoon out watermelon.
  2. Put watermelon and lime juice into blender and process on medium. It will turn to liquid very quickly.
  3. Add ice. Less ice will make it more liquid-y, more ice will make it thicker.
  4. Add mint and vodka (if using) and blend again until desired consistency.
  5. Pour and serve with more fresh mint. Enjoy!

How adorable are these little personal sized watermelons? When I saw them at Trader Joe’s I knew they would make the cutest little bowl/cup for this slush! And you can make them as a cocktail for the adults or without the alcohol for kids or anyone else.  

A splash of vodka and you will feel like you are at happy hour at a beach resort.  Fun and tropical, even when you are home on the couch (like me). 

Either way they are super delicious and refreshing.  And no added sugar is necessary. These drinks are healthy, low calorie and have the cutest presentation ever!

 They are great for parties and cook outs and the kids love drinking out of the watermelon “cups”! Honestly, whatever extra steps are needed for kids to eat and drink their fruits and veggies, I am in.

Although my middle child saw the mint leaves and thought they were vegetables because it was green. Sigh….I just took off the mint, there it away and he smiled. Again, it’s the little things.

The best part of these is that they are so simple to prepare, even your kids could make them. They might look fancy but only you and I have to know how ridiculously easy they are to make. I won’t tell if you won’t tell.

And you can either make these in the cute watermelon bowls or a plain glass.  No judgment here. Either way this is so light and refreshing and you will want to sip this all summer long.

I like to make pitchers for parties and cookouts. Be prepared to make more because they go fast! Before you know it, you are running back to the grocery store for more watermelon! I have been there before.

Do you love watermelon as much as we do? Actually my oldest doesn’t like it, I think its the texture, but that’s weird. How can you NOT like watermelon? It’s one of my favorite parts of summer!
