Happy almost 2014!
2013 has been quite memorable for me. I wrote another cookbook (in just 6 weeks, YIKES!) and revamped my blog. I have come to the realization that working full time (yes blogging is hard work!) with three small kids and no outside help isn’t easy. But I love it. And I wouldn’t change it for the world.

These are a healthier twist on the original rice crispy treats recipe. I promise if you make these, no one is missing the marshmallows, refined sugar and other junk. They are incredible.
Gluten Free Spinach Quinoa Balls
Warning, these are extremely addictive. Bring these to parties and people will love you for it. They are so delicious, simple to make and also gluten free. Total bonus.

To. Die. For. And healthy. And pretty. What more could you ask for in a salad?
Black Bean Brownies with Pomegranates
I am so happy that you weren’t turned off by the title of these. I know, they are made with black beans, but you can’t taste them! The beans add fiber and protein with out all the fat and calories that butter and eggs have. Pomegranates are not only good for you but pretty too. I love a good looking brownie.
I eat pumpkin all year long. Good thing they sell cans of 100% organic pumpkin or I’d be very sad. These pancakes are so fabulous we make them for dinner too. A lot.
Pistachio Cookies (with a secret ingredient)
I was thrilled to see that these were a popular recipe on my blog because they are straight from my latest cookbook, The Greek Yogurt Cookbook! So obviously there is Greek yogurt in these babies, but what else makes them green? Avocados! They are loaded with healthy fats, vitamins and minerals and they replace butter. Pretty sneaky, huh? Pretty awesome too.
