Isn’t it crazy to thing how fast time goes by? It was one year ago that I came home from the hospital from my second intestinal blockage.
Being in the hospital for almost two weeks, barely walking, not eating and missing my family…it was on this day one year ago I was finally able to come home to my family. And it felt amazing.
Having not eaten and undergoing (my 6th) abdominal surgery, I wasn’t able to eat much of anything. On the second to last day in the hospital they told me I could finally eat.
I was thrilled! Does this mean I get to go home?
I wasn’t exactly hungry (typical after abdominal surgery) but what in the world would I even want to eat? My dear friend Kelly was coming to visit me and told me she would bring me anything I wanted.
At last! I can eat!
It’s been almost 14 long days, and my first food doesn’t have to be hospital food!! Kelly said she’s bring me whatever I wanted, from wherever I wanted and you know what I asked for?
Soup.
Ah, yes. It might seem boring to some, but anyone who knows me is well aware of my love for soup.
Kelly can attest to the fact that when I first brought the delectable soup to my mouth, I was groaning (happy groans) and ecstatic that I was indeed on my way to recovery.
This was exactly one year ago.
And my love of soup is still alive and kicking!
There is something so comforting about a bowl of warm, delicious soup. I wish I had the time to make my own soups every week, but with work and these busy little boys, I have to search for other high-quality options.
So I did some research (aka label reading) and learned that ProgressoTM has a wide variety of chicken soups made with 100% antibiotic and hormone free white meat chicken breasts. That’s right, NO ANTIBIOTICS EVER.
That’s very important to me. And it should be as important to you.
With so many different varieties, every one in my family can pick out their favorite! And let’s be honest, I love making my own soup at home, but there are many nights when I am looking for convenient, quality meal to give my family.
You know what’s also fun about eating soups? Dunking things in the mouthwatering broth.

These delicious, cheesy quesadilla make the perfect pairing to ProgressoTM Reduced Sodium Savory Chicken and Wild Rice Soup. Or really any of the varieties but there is something about the Savory Chicken an Wild Rice Soup that just sounded so comforting.
And it did not disappoint.
You can boost the nutrition of these quesadillas by adding chopped tomatoes, bell peppers or other vegetables to the spinach mixture or some black beans for added protein and fiber. The possibilities are endless!

Spinach Avocado Goat Cheese Quesadillas
Ingredients
- 1/4 cup goat cheese
- 1/4 cup plain Greek yogurt
- 1 tablespoon olive oil
- 2 cloves garlic minced
- 1/2 cup chopped green onion
- 4 cups baby spinach
- 2 avocados seeded and diced
- 4 7 " tortillas any kind
Instructions

In a small bowl, mix together the goat cheese and Greek yogurt. Set aside.

In a large skillet, add the oil. Sauté the garlic and onion for 3-4 minutes over medium heat until soft.

Add spinach and cook 2-3 minutes until wilted. Place spinach mixture in a bowl and set aside, leaving as much oil in the pan as possible. Lower the heat.

On half of the tortilla, spread the cheese mixture.

They layer with sliced avocado and spinach mixture.

Fold tortillas over and place in the skillet.

Cook on medium-low heat for 5 minutes on each side until golden brown. Serve immediately!

Soup is my go to comfort too! And when you can’t make it yourself, Progresso is a great option. But—I thought you weren’t a goat cheese fan, HMMM, now you have me intrigued to try these quesadillas with goat cheese instead of my beloved feta 😉
