Lightened up but still insanely delicious, these Snickerdoodle Bars will be everyone’s favorite treat!  This is packed with all of the cinnamon-y goodness of the classic cookie.

Three days of being snowed in will bring you 1 pot of chili, 2 loaves of banana bread, bean salad, chopped Mexican salad, spaghetti and meatballs, smiley faced pancakes, chocolate chip cookies and snicker doodle bars.  Well, that is if you were snowed in at MY house.

That all sounds delicious, right? Sure.  But the problem is that you are stuck inside all day.  

Eating.  And eating more.

And more.  

You get the idea.

These Snickerdoodle Bars were definitely the hit of the snow storm.  I found a recipe for Snickerdoodles in Cooking Light and knew I wanted to make bars, not cookies.  

My kids beg for me to make these daily now.  Man my kids are smart.

When my husband told them I was making them again, they all ran to my kitchen window actually more excited for these bars than the snow.  I know!

It’s unbelievable!  They LOVE the snow and playing in the snow always trumps everything.  

But I guess there is always a first for everything and they actually love these Snickerdoodle Bars even more.  I told you they were smart.

Besides being smart, aren’t they so cute? I swear they could smell these Snickerdoodle Bars from outside while they were playing in the snow.

The picture above makes me so sad. It was the next day that I was admitted to the hospital for emergency surgery where I will then stay for almost 3 weeks. 

You can read about my story here. I had no idea that I would soon be having a severe abdominal bowel and intestinal blockage that would require months to recover.

The picture makes me sad because everything was great, the kids were playing and I was baking and none of us had any idea what was going to happen just 24 hours later. Thank goodness I am all better now and feeling stronger than ever.

Ok, back to these delicious snickerdoodle bars.

They are so incredible that you do not want to miss this recipe! Your favorite snickerdoodles in a bar.

Just remember, when you make these, make sure you make it for a group of people.  If you make them while you’re snowed in, they will not stand a chance.  

Trust me, I know.

Better yet, you can do what I always do when I bake. I take half of the batch and freeze them to prevent from overeating and overindulging.

And it’s also very convenient to take out and quickly defrost when you want a sweet treat or dessert. I usually freeze my desserts in groups of three (one for each kid) just to make it easier and this way when they ask for a second one, I simply tell them that they are frozen.

I mean, it’s not a lie.

Snickerdoodle Bars

Course cookie, Dessert, treat
Servings 24 bars
Author Lauren Kelly Nutrition, adapted from Cooking Light

Ingredients

  • 11/4 cup whole wheat flour
  • 1 cup all purpose flour
  • 1/2 teaspoon cream of tartar
  • 1/2 teaspoon baking soda
  • 3/4 cup + 1 tablespoon unrefined sugar
  • 3 tablespoons butter room temperature
  • 1 tablespoon honey
  • 1 teaspoon vanilla
  • 1 egg
  • 2 teaspoon cinnamon

Instructions

  1. Preheat oven to 375 degrees.
  2. Grease a 9 x 13 baking pan with cooking spray or butter.
  3. Combine flours, baking soda and cream of tartar in a small bowl. Mix well.
  4. Mix 3/4 cup sugar and butter with an electric mixer in a large bowl on medium speed until well blended.
  5. Add honey, vanilla and egg. Mix well.
  6. Press dough evenly into prepared pan.
  7. Mix together cinnamon and remaining 1 tablespoon of sugar in a small bowl and spread on top of dough.
  8. Bake in preheated oven for about 25 minutes or until toothpick placed in center of pan comes out clean. The edges should be golden brown.
  9. Allow to cool on counter for a few minutes before slicing,

    Snickerdoodles were a favorite cookie of my neighbor and that’s how I first got to try them a few years ago. Now that I’ve seen the bars, I’m so wanting a piece right now with a hot cup of tea! Hope the snow is all cleared up now…and that you’re doing well xx

    We were only snowed in for 1 day – I wonder what I would have cooked if we were snowed in for three days haha! Sounds like a blast to me 🙂 I don’t think I ever had snickerdoodle bars – we have something similar in Germany but not quite the same. I love the sound of your lightened up version – I bet these are fantastic!!

    These bars look delicious! I love snickerdoodles but in bar form I might like them even more. Plus they are lightened up so I can have a few more 🙂 Funny enough we got zero snow in that storm. The weather is so weird.

    Am I missing something? There’s no baking soda listed in the ingredients, but there is in the directions. I guessed at how much to use. There’s no indication in the instructions to add the flour mixture. And it didn’t come anywhere near filling a 13×9 pan. Pretty much a wasted effort.
