** BOOK REVIEW**
I am so excited that my dear friend Carrie (from Carrie’s Experimental Kitchen) had her cookbook released yesterday on Barnes and Noble and Amazon.com!
I was lucky enough to get the book early (it helps to be friends with the author ;)) and I have already made several of the recipes. The cookbook is super easy to follow and every recipe came out delicious! I made the Spinach, Garlic and Roasted Plum Tomatoes one night (I know, it was as fantastic as it sounds!) and even made her Apple Cranberry Stuffing for Thanksgiving! One recipe was better that the next (for real).
So I decided to make the Gemelli with Chicken, Spinach and Feta. Check this out, I mean, come on. Amazing.
I had to substitute rotini for gemelli pasta because that’s what I had in the house. This was so simple and it tasted so yummy! The hubby REALLY loved it. The feta gave it such a delicious flavor. Carrie is such a huge talent and her cookbook shows that. Go out and get yourself one, it would be a great holiday gift too 🙂
