I love a hearty, healthy dish that can easily be prepared in one pot that is ready in under 30 minutes!

Sweet Potato Kale Quinoa Skillet

Halloween is over.  It was a great day here in the Kelly house, but boy am I exhausted.

All 3 of my little guys want to be in different places and I am left trying to coordinate everything.  So as fun as it is (and I kept reminding myself to look at it through their excited little eyes), I am happy it’s over.

Maybe I am just getting old and crotchety but it’s one long day.

So now it’s all about Thanksgiving.   And side dishes.  Lots and lots of delectable side dishes.

I’d say this could be a holiday side dish, but since there are quinoa and beans in here, this would also qualify as a nutritious, meatless main dish.

Shout out to my vegans out there! Heeeeeeey!

Sweet Potato Kale Quinoa Skillet

With the holidays coming up, I am all about making life easier.  This recipe calls for one dish and that’s it.  Super easy and less clean up!  We are busy enough around the holidays so I appreciate any free time I can get.

Side note:  I have a friend that finished all of her Christmas shopping.

I KNOW!!!

I haven’t even begun to think about Thanksgiving, let alone Christmas!

And why do the stores put out there Christmas stuff before Halloween even arrives?

One Pot Sweet Potato Kale Quinoa Skillet that will be ready in under 30 minutes from Lauren Kelly Nutrition

Sweet Potato Kale Quinoa Skillet

Servings 4 -6 servings

Ingredients

  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 1 small onion chopped
  • 1/2 teaspoon salt
  • 1 tablespoon fresh sage
  • 1 15 ounce small white beans rinsed and drained
  • 2 pounds sweet potatoes peeled and cut into cubes
  • 16 ounces kale
  • 1 1/2 cup vegetable broth
  • 1 cup quinoa

Instructions

  1. Heat oil, garlic and onion in a large skillet over medium heat.
  2. Cook for 2-3 minutes until onions are translucent.
  3. Stir in sweet potatoes,salt and sage. Cook for about 5 minutes.
  4. Add beans, broth and quinoa. Bring to a boil.
  5. Cover and reduce heat to low.
  6. Cook for 15-20 minutes until liquid is gone.
  7. Add kale and still until wilted.

    This has tons of flavors I love in it. I need some easy recipes too. Besides all the holidays, all 5 of us have birthdays in Nov & December, so life gets pretty hectic. Quick and easy are the way to go!

    Haha – well, think I’m looking at the cure for old and crotchety! This dish sounds wonderful – I love kale sauteed in dishes and yuppers – this would be a wonderful holiday side dish AND a nutritious, meatless main dish any night!

    This looks like such a healthy and satisfying recipe… definitely the kind of thing I need on my menu to counteract all the fatty, buttery, sugary treats that show up around this time of year! We’ve already had Thanksgiving up here in Canada, but I’m thinking I might just celebrate again for the heck of it. ๐Ÿ™‚

      I freeze just about EVERYTHING Brandi, but I have never had leftovers of this to freeze ๐Ÿ™‚ Let me know if you freeze it and how it comes out!

    What kind of skillet/pan worked best? i went through three and couldn’t determine the best? Also, kale at the end?

      Hi Megan! Yes kale at the end. I would use a big skillet to hold everything. I used a 5 qt sauce pan. I hope you like it!
