Simple to make, healthy and delicious, these Mixed Berry Oatmeal Cups make the perfect on-the-go breakfast!

Most of you know that I am in the process of selling my house. We have lived in this house for almost 15 years so we have never sold a house before.
I had no idea how stressful this is.
And by stressful I mean incredibly, unbelievably stressful.
I haven't been able to keep up with my weekly meal prep or even cook as much as I normally do. I TRIED to make a delicious roasted vegetable frittata for the blog (and for my dinner!) and then a realtor called and wanted to show the house.
Note to self: Baked eggs do not make your house smell nice.
Needless to say, those people didn't come back. I am not sure I blame them. I am sure you can imagine what my house smelled like.
Back to the drawing board. Ans that means no more cooking smelly foods, especially baked eggs.
I have been struggling trying to get healthy breakfasts for my kids. I know how much they love my Peanut Butter Chocolate Chip Baked Oatmeal and my Strawberry Banana Baked Oatmeal but some days my middle schooler wakes up late and has to take his breakfast with him in the car. That's when I decided to make the baked oatmeal into cups that you can take along with you! It's not optimal, but at least I know he's eating a healthy breakfast.
The beauty of these babies is that you can make them with any additions you'd like. I used dried chopped cranberries, blueberries and tart cherries, but you can use whatever dried fruit you'd like. Or even chocolate chips, cacao nibs or nuts. Go for it, the possibilities are endless.
I use Now Foods Organic Triple Mega Seed Mix ALL THE TIME. Its a blend of raw hemp seed hearts, chia and flax and it's so incredibly versatile! I use it oatmeal, smoothies, granola, you name it. It's packed with omega-3 and omega-6 fatty acids, fiber and protein. I go through this quickly so I recommend stocking up on it.
Ingredients
- 2 cups gluten free oats
- ¼ cup Now Foods Organic Triple Omega Seed Mix
- ½ cup almond milk
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 very ripe banana mashed
- 1 teaspoon cinnamon
- ¼ cup 100% maple syrup
- ¼ cup chopped dried fruit I used cranberries, blueberries and tart cherries
Instructions
- Preheat the oven to 350 degrees.
- Grease a muffin tin with coconut oil or spray with baking spray..
- Mix all the ingredients together except dried fruit until combined.
- Add dried fruit and mix again.
- Place mixture into prepared muffin tin and bake for 25-30 minutes or until golden brown and completely set.
- Allow to cool for a few minutes before removing from tin, Enjoy!
The best part of this recipe is how easy it is! You mix up the ingredients in a bowl and put it into a muffin tin. BAM!

I love that seed mix too!!! I throw it into smoothies or pour it on oatmeal ALL THE TIME. These lil' muffin oatmeal cups are perfection, btw!! And I'm sure smell divine whilst baking 🙂

Ugh. Selling a house is the worst... I'm in the middle of planning a major renovation, mostly because I just couldn't face the idea of selling our house and decided to fix it up instead. (Which, BTW, is a whole other kind of stress! But on the bright side, I don't have to worry about making the house look pretty and smell good, so there's that.) Hopefully you have an offer soon.
