We have a lovely variety of healthy dishes in this week’s healthy meal plan! From Watermelon Berry Salad to Hearty Beef Stews, we have it all ready for you to prepare this week!
September is weird. It’s crazy busy with back to school and back to activities. My head is spinning with the amount of paperwork and just trying keep it all together. I am afraid I am going to forget something, or even someone, somewhere. Don’t judge, I told you my head was spinning.
You know what is also weird about September? The leaves are falling, the kids are back in school and it’s 90 degrees. That’s weird.
So this week we have a wide variety of meals for you, some that are packed with delicious summer fruits and some that are hearty and comforting. Any way you look at it, these meals are far from weird and super delicious.
Monday
Beef and Barley Stew with Biscuit Croutons from Hip Foodie Mom.
Recipe Tip: If you’re watching your carb intake, feel free to skip the biscuit croutons! This stew is great with or without!
Tuesday
Caprese Quinoa Salad from Lauren Kelly Nutrition.
Wednesday
Fig Prosciutto and Arugula Focaccia Bread Pizza from Flavor the Moments.
Prep Ahead: The focaccia dough may be made ahead and baked either the day before or the day your serving the pizza.
Thursday
Green Goddess Quinoa Bowls from greens & chocolate.
Prep Ahead: You can cook the quinoa and make the green goddess sauce ahead of time.
Friday
Watermelon Berry Salad from Spoonful of Flavor.
Prep Ahead: You can make the dressing in advance and refrigerate until ready to serve.
And because September is weird and busy and you are trying to stay organized…. here’s your grocery list! You are welcome.
Have a great week!
