Can you believe it’s already August? The summer has flown by and I know so many of you are either headed back to school soon or have already started. That is CRAZY! Thankfully we still have a whole month left and I am hanging on to every last second.
Side note: That doesn’t mean I won’t be skipping around my house singing on the top of my lungs when it’s time to go back to school. I DO miss having a schedule.
But until then, I will enjoy all of the summer fruits and vegetables, long nights and days at the pool.
Let’s get started with this week’s meals. I don’t know about you but I have my eye on that Grilled Peach Crostini with Arugula, Prosciutto and Goat Cheese from My friend Ashley at Spoonful of Flavor. If this doesn’t scream summer, I don’t know what does. Full disclosure though, I will leave off the prosciutto and the goat cheese. Don’t yell at me!

That wrap looks incredible too. I love using hummus as a substitute for mayo. You all know how I feel about mayo, don’t you?? No like. At all.
