Coconut Curry Summer Squash Soup, Baked Salmon with Roasted Potatoes and Summer Vegetable Quinoa Chili are just a few of the delicious dishes in this week’s healthy meal plan.
We just finished a week away at the beach and although it’s great to be away, I am ready to come home. I am also ready to start eating better and to get back to my routine. I ran almost every day on vacation, but we all know your diet is the most important part to feeling great.
Let’s just say there wasn’t much moderation going on this trip.
We had ice cream every night (I tasted my kids and one night ordered my own huge sundae) and we had a couple of glasses of wine every night.
It was wonderful.
The weather was absolutely perfect. The beach is definitely my happy place and although I hate to say goodbye, I want to get back to reality and help get my kids prepared for school. They finally start school after labor day!
You know it’s a fabulous vacation when your jeans are tight! ๐

Prep Ahead: This is one of my favorite salads! The salmon is optional if you don’t eat fish but I highly recommend making it!

My husband’s family does an annual beach trip and let’s just say moderation is out the window! I love meal planning so much, but it doesn’t always happen for me! I really need to be better about it!
